    🔸 Ingredients:
1 ½ cups of unbleached flour
    ½ tsp salt
¼ tsp freshly ground black pepper
    3 eggs, beaten
1 ½ cups of panko bread crumbs
    10-12 chicken tenders
    Oil spray
    Spicy Chicken Sauce:
    2 jalapeños, sliced
    1-2 serrano peppers, sliced
1 medium yellow onion, large dice
    1 bottle of soy sauce
The juice of a whole lemon
    🔸 Instructions:
Preheat your air fryer for 10 minutes at 400°; if you are using an oven, preheat it to 400° as well. Add 1 ½ cups of unbleached flour to a plate, along with ½ tsp of salt and ¼ tsp of freshly ground pepper. Next, beat 3 eggs in a medium bowl. Then add 1 ½ cups of panko bread crumbs to a plate. Place them next to each other; this will be your assembling station. Start by coating the tenders, 1 or 2 at a time, first with flour, then eggs, and lastly the breadcrumbs. Continue this process until all tenders are coated.
Next, add the chicken tenders to the air fryer and use oil spray to evenly coat them. Cook for about 30 minutes, turning them over at the half-way point. Do this in batches so that the air fryer is not overcrowded. If you are cooking them in the oven, you can layer them on a sheet pan and use the same method, turning them over at the half-way point.
While the chicken tenders are cooking, you can prepare the sauce. Start by slicing 2 jalapeños and 1 to 2 serrano peppers into about ¼ inch slices. Now chop 1 medium yellow onion into a large dice. Add them to a bowl along with a full bottle of soy sauce. Next, juice a whole lemon into the sauce. Taste, and add more lemon if desired. Serve, dip and enjoy!

How long will the sauce last in the fridge?

It will keep in the refrigerator for about a week, but trust me, it will be gone long before that.
