As someone who avoids processed cheese, I've tried several recipes for Queso and I will say that if you add a some velvetta or white american cheese to this it will help to make the other Queso much more homogenous. I usually divide the monteray jack and processed cheese 1 for 1. You may not need the corn starch either.
