    Chef Yener. I trained as a pastry chef a number of years ago but I often had difficulties with my chocolate work. Since watching your videos about chocolate I have improved 100 %.     Thank you for another wonderful tutorial. My five year old daughter and I are watching together before bed. She says when she meets you one day she is going to tell you she watches you every night and she learned how to make a unicorn from you.

      can i use parchment paper instead of plastic sheets? will that work?

      No that will not give you the shine, use clean and new paper sleeves

    hi chef..I'm new to your videos..They are really informative. I just have certain doubts about the chocolate you are using..is it tempered or just the compound melted right away ?? Becuase when ever I try to make garnishes it always melts as soon as it comes out of the refrigerator. Please suggest me a method to rectify this

    I understand this chocolate isn't tempered, right? Since you cut circles out of it and comment how tempered chocolate would snap, and you avoid that by using melted but not tempered chocolate. But won't these decorations get white spots all over them? Or must you use them the same day to avoid that?
    This is the only part that's unclear to me. Thanks so much!
