People often need to categorize things to understand how to relate to things. I loved it when I came to America, and after integrating, people just thought of me and my family as American. No one even asks anymore if we are Chinese or Thai, they just accept we are Americans and don't even think twice about it - only place on earth we have seen that and it makes you feel welcome.
I think they cathogarice her because Jennifer is a very common name. Most people know 5 to 12 Jennifers and they need to be able to distinguish them somehow. It has little to do with her ethnicity but more to do with finding the one thing fast, that makes her different. With a name like Melody or Erika, people would not do that.
I think the opposite. Chinese Thais have no issues with people seeing them as Chinese. They are also proud to be Chinese and it would be insulting to group them with other East Asians under the "East Asian Thai" category.
Note that Thailand has the best assimilation of Chinese immigrants in the world. And it's not because people don't care about their heritage and just look at them as Thais with smaller eyes. It's actually the opposite. It's because Thai people know a lot about traditional Chinese culture and teachings and values from being exposed to Hong Kong and Taiwan's movies and TV series and cultural events organized by Chinese Thais on important festivals and books on Chinese philosophy and stuff. You see the more native people know the good things about your heritage the better the acceptance and assimilation.
Half Thai and half English here. My genes might be mixed, but my belonging has never been questioned. My nationality has never been in question either, and I have never been referred to as x-Thai. Any issues that might be levelled at me, come from Thais.

I’m a Californian/American that used to live in Sweden and if you’ve never lived there, you don’t know their culture. It is far different than what you seem in some random “happiness” poll.
I think the last thai miss universe was a thai danish descendence but she looks more viking than thai. The swedish thai look better i think 😂 but better a real thai women 100% to meet the culture entirely

I have heard the same thing from others who are biracial. I can see how uncomfortable that can be!!!
