CREAMY SPINACH DIP RECIPE
2 cups frozen spinach, thawed and drained
1 cup raw cashews, soaked in water for at least 4 hours or overnight
2 tablespoons lemon juice
Salt and pepper to taste
Drain and rinse the soaked cashews.
In a blender or food processor, add the soaked cashews, lemon juice, salt, and pepper.
Blend the ingredients on high speed until smooth and creamy. If needed, add a little water, a tablespoon at a time, to achieve the desired consistency.
In a mixing bowl, combine the creamy cashew mixture with the thawed and drained spinach. Mix well until the spinach is evenly distributed.
Taste the dip and adjust the salt, pepper, and lemon juice according to your preference.
Transfer the creamy spinach dip to a serving bowl.
Garnish the dip with a sprinkle of black pepper or a pinch of fresh herbs, if desired.

For a more savoury option: cook shallot until slightly transparent, add one chopped garlic clove, add creamy spinach dip and add nutritional yeast for cheesy flavour.

Do you think it would be better if you added nutritional yeast, onion powder and Worcheshire sauce? (Or soy sauce, or whatever the vegan alternative to Worcheshire is? I want to make this, but I'm going to be adding some different spices to it.

Is the spinach cooked?
Just for fun, I did something similar this weekend but used potato (mashed) and cooked spinach (mashed)
Google says frozen spinach is already cooked. Good idea about using mashed potatoes too, sounds yum!
I presume the frozen spinach is flash cooked and then frozen. I never really thought about it as it can be eaten fresh or cooked.
I have all those ingredients in my kitchen right now. I wonder if you can change out the type of nuts because I also have hazel nuts and almonds that I would like to incorporate into a dish ?
Cashews are fairly neutral in flavour, so be prepared for a stronger flavour with other nuts.
Cashews are neutral in taste. Almonds might be ok. Hazelnut flavor might be a bit overpowering.
Thanks for the recipe. I do better when I have a healthy dip ready to eat with my raw veggie sticks or roasted eggplant (aubergine) slices!
