My Italian wife, Eva, never eats breakfast. Why? Because in Italy, breakfast is hardly a "thing" and, at most, consists of a sweet pastry. Which is why I thought it might be time to introduce her to America's favorite sweet breakfast: a donut (or twelve).

"Change the oil!" -- I teach classes on foods, and one time I researched donuts. I called a local shop and asked how often they changed the [partially-hydrogenated, refined] oil. "About every two weeks." Yikes. No wonder Ava balked. Her "taster" has not been corrupted from a lifetime of food fried in old, rancid oil.

Eva knows what she's doing. And when she doesn't, she asks.
But she'll still do an excellent job, so long as it's not one of Harper's experiments where you cool down pasta once, microwave it, cool it down a second time, and then microwave once more.
I don't know where I'm going with this. Anyways, kudos to Eva.

Thst "bad fried" flavor is from modefied shortening that they use for frying. Reason why it's bad for you is because the shortening stays solid at room temperature (it clogs the artery if you eat too much of it), and they use this shortening because the donuts will not taste greasy. If you make your own at home using regular cooking oil, it always taste different.

Our family makes a similar donut called crespelle (some versions have potatoes), and we put raisins in them, but usually make them for Christmas. I still like Tim Horton's as much as you like Dunkin (I loved those when I visited friends in Massachusetts), but I grew up with donuts. It would definitely be culture shock to someone from Italy. When I saw the title of the video, my first thought was, "Don't take her to Dunkin'." I cringed when it was DD. I have one down the street from me and I do go there every now and then for a coffee. The donuts? No. Their donuts used to be much better years ago when they were still made in the stores. Now most of them are made elsewhere and the stores get them delivered. I've heard that some stores still make them but I think that most do not. This cut back on the quality a lot and I think they are also using cheaper ingredients. Add old oil to the mix and you have an end product that is not worth the money or the calories. I can't give an honest opinion on KK because we don't have them near me so the only ones I have ever tried are the ones sold in boxes in the grocery store but they were still better that what Dunkin sells these days and that's sad. Especially since I grew up on Dunkin'. Great video as always.

In fact, even in Italy we have Donuts, or at least very similar in shape. I happened to taste one in America and I also felt the dough was different from the one we use in Italy, obviously the quality of the oil and how often it is replaced is another important element to determine the quality. However in Italy they are called "ciambelle fritte" or "bomboloni", the aesthetic characteristic that differentiates them from the American ones is that in Italy we are used to putting simple granulated sugar in them, we do not use the icing as I see in the American ones. But one thing I can say, for both Italians and Americans, it is the quality of the ingredients and the oil on which they fry that make the difference.
