Cheeseburger Cook Off | Italian vs. American Burger Challenge
Normally my Italian wife, Eva, has a major advantage over me when we conduct friendly cook off competitions, as she is an amazing cook and I am, well, not. But today the playing field is leveled as we're making an American classic: the humble cheeseburger!
In today's video, we put Eva's skills to the test to see if she can make the superior burger. Did I mention she's never had a real cheeseburger before?

The best cheeseburger I've ever had was in Paris, at a cafe called "Le General Beuret." It wasn't a fancy cheeseburger or a special variety or anything like that. But all the components tasted really good, everything seemed to be really good quality and fresh, and it was cooked exactly the way I like it. It was just one of those times when you get the best burger you've ever had, and it happened to be in Paris. I'd been to the place before and I've been back since, and those burgers were very good, but not the best ever.

The way Eva says cheeseburger, I immediately think of the early SNL cheeseburger skit from the 70's. :)
fusion is the answer, here's a recipe for an italian-tex burger:
-350g of american beef for two patties. Not minced but finely chopped with a knife instead. It also has to have around 25% fat atleast.
-two big slices of italian cheese, one over each patty. I recommend "a pasta molle" cheese (translated: "soft cheese") like: Taleggio, Scamorza, Provolone Silano... i mean... Google is your friend.
-Homemade buns with sesame seeds.
-2 big eggplant slices,grilled and marinated for 2 hours in white vinegar, salt, oregano, garlic and basil.
-a pinch of red onions and red bellpeppers slowly brased with just water and sugar (google "marmellata di cipolle"). I personally swap bellpeppers with fresh Habaneros couse i like a spicy life :D
-sauce: something spicy and smokey but not too much.
assamble in this order:
-bun, sauce, eggplants, patty with cheese+patty with cheese, caramelized onions+bellpeppers, 2 leafs of basil, bun with more sauce.
Optional wherever you like: smoked pancetta a.k.a. bacon.
DONE.

I was giggling through Eva's first burger cause meatball sub was exactly the feeling it gave me when I watched her make it. My family loves burgers but we keep the Italian part of us out of them hahah. My parents always had rules about food, one of them being strictly keeping many Italian dishes and flavors out of traditionally American foods. And vice versa. If you both wanna try something good, toss that Kraft you guys always have and try land o lakes white American fresh cut from the deli! It's really good! Also definitely try white cheddar on a burger Eva, with bacon and avocado, life changing!

Eva's was more of a meatloaf, wouldn't you say? Her second attempt was definitely gourmet. Any hipster bistro would be proud to serve it. They both looked yummy, but Harper's looked classically scrumptious.
I love how Eva's facial expressions are almost the same, whether she likes something or not. But whenever she likes it, she says she has to try another bite. You guys are the best.

Harper's burger is exactly how I make mine. I call them my smash burgers lol I loveeee the fusion burger. That looked delicious, that crunch when you guys took a bite; WOW! I think Eva should put a cookbook out with all her amazing recipes. Also you both should come up with some more fusion type dishes. Would be fun to see!

The closest thing Italian to the hamburger is the panino a l'arrosto.
For my hamburger i chop the steak, cook it in the micro wave, ad salt and olive oil, mix it with one egg and cheese, make a patty, fry it, cut and toast a roll, ad olive oil,oregano and tomato sauce, ad the meat, ad more sauce and cover.
I can only imagine what Eva thinks of that grated "parmesan" from the little green can. :o
My cousin used that stuff to spike her dogs' kibble It was good for that. But it's not cheese...

Nooooo. Cast iron is the definitive cooking surface. Grilled is second best at best.
Well done guys! Very fun. My Italian neighbor growing up made her kids burgers which had her Italian meatball mix (breadcrumbs, peppers, onions, Parm Regg,spices), marinara sauce, and thick slices of mozzarella cheese. The burger must be very thin or it gets a bit too dense to eat. In reproducing this in recent years, I make the cheese as thick as the burger, about 3/4 in. each. Eva's instincts were spot on!
Plain meat on grill, lettuce, tomato and onion on toasted roll. And of course any type of cheese.
I remember the first time I made cheeseburgers for my boyfriend (may he Rest In Peace) and his son. Like Eva, I made very flavorful flattened meatball sandwiches. Their high expectations were dashed in the first bite. The disappointment in their eyes brought tears to mine. I had no idea what criteria made a great burger, but I learned fast and redeemed myself, shortly thereafter. Thank You, Eva e Harper for bringing that sentimental moment to mind. I Love You two! ❤
Harper, Juicy Lucy burgers in Minnesota have the cheese inside and there are blue cheese stuffed burgers here in New England.

I'm vegan. So I'm going to try Ava recipe with beyond meat and dayia cheese.
I would gladly eat any of those 3, as long as the first one didn't claim to be a burger.
Harper's burger was basically the best model, I add a little onion powder along with the salt and pepper.

Favorite burger is simply a smash burger or an Oklahoma onion burger. Optional as always but preferred with chili. Eva you did a great job as always and Harper thank you for reminding everyone the key to a good burger. Simplicity step one get the meat, step two handle it as little as possible before cooking. Congratulations Harper on finally beating Eva in cooking an American hamburger 🍔. I liked everything except the mayonnaise. I always tell them at Burger King to hold the mayo. The fusion burger looked good. 👍🏼🇮🇹🇺🇸. I make my own fusion burger with blue cheese inside, sautéed mushrooms and I use mustard instead of ketchup. Toasted English Muffins make good hamburger buns too.
I'm so surprised she used spaghetti sauce instead of ketchup. Figures. 🤣 You read my mind, it's a meatball sandwich or meatloaf. 😋 My goodness, she questioned if you can make a good burger? Eva, my Grandma was full Sicilian, and the BEST hamburgers I ever had were the ones she made from her meatball mix. How I wish I could taste one again. I'm so happy you thought of this!!

In this epic Italy vs USA culinary standoff it's been a bloodbath in favour of Italy but just when you thought all was lost we see a very late but strong counter attack from the plucky Americans. The American burger is the definitive burger and let no Italian tell you differently.

Gotta love the first thing Eva goes for in her fusion burger is the flour......and proceeds to make home made buns!!!!

The ideal burger is medium rare, with cheese that pairs with its other ingredients, and no American cheese. Bacon is always a must-have and pairs with sweet things like caramelized onions and tomatos. Salt helps bring out the other flavors, so blue cheese and goat cheese are the best cheese additions in my opinion, or provolone if you don’t want cheese to overpower the flavor of what you’re trying to highlight. It’s always a good idea to salt and pepper your burger before cooking, because it brings out the flavor of the meat. Be sure to give it a fairly generous amount, because 35% of the seasoning is lost in the cooking process. For added sweetness you can use Hawaiian rolls.
The best burger I ever had though, was beef, bacon, goat cheese, strawberry jam. A perfect combination of sweet, salty and savory.
There are different kinds of burgers. I believe what you're referring to is a gourmet or pub-style burger. A classic American cheeseburger, in ideal form, has thinner patties which are seared under pressure to produce more browning. Having two thinner patties (double cheeseburger) allows for more surface area of the seared beef, which has different and arguably richer flavor compounds than the interior of the patty. And with medium rare burgers, sure you'll probably never have a problem but ground beef is a different animal than whole beef cuts in terms of food safety, for reasons some may not like to think about. Also a neutral salty cheese like American can be just the right companion for the savory beef flavor, leaving room for the fresh vegetables to guide the taste, with pickles for tanginess and sweetness. The play between ketchup, mustard, and mayo fills in all the tangy sweet spicy details

This was so wholesome! I went to Venice and Rome and ordered a club sandwich inside one of the Roman malls, and let me tell you it tasted NOTHING like the American club that they had pictured on their wall! Apparently, Italians make "club sandwiches" out of whatever leftovers they have on hand, not the traditional turkey/bacon/lettuce/tomato/mayo you'd expect. Ask lovely Eva to make you a club sandwich, but make sure you have a leftover scrambled egg patty and tomato in your fridge... Then, see what heinous concoction she prepares from that. xD Italians make the absolute best Italian pasta/pizza/gelato I've ever tasted in my life, but they can't mimic American cuisine and it's the cutest thing. lol

Harper's a good cook, it's just that the show's about Itallian food and he shines in American food. Not only that but he usually takes on the joking persona of an american who only understands the american approximation of itallian food, which is part of the premise. I love these videos! That last burger looked amazing. I love classic American burgers but the one part I don't like _that_ much is the brioche bun, that hearty bun looked like it would work very well with a burger.

I am American Italian and watching Eva, who I love and I know she makes wonderful delicious Italian dishes, but just watching her make this I knew it was not a burger but a meatball sub.
As an Italian who moved here when I was a teen I'll admit I was rooting for Ava. I thought the same thing about her burger being a meatball. Yours was cooked perfect. No filler just an iron skillet seared burger, the way god intended. If only it had mustard instead of ketchup, then it would be perfect.
