My ultimate burger is a Halloumi Cheese Lamb Burger. I grill a lamb patty medium rare and grill a piece of halloumi cheese. I take regular ketchup add balsamic vinegar, sundried tomatoes, and pomegranate mollases and pulse it through a blender. I make a basic chutney as well using fresh mint, lime zest, lime juice, white vinegar, a jalapeno, and a shallot... and pulse that through a food processor. I make my own brioche buns from scratch which I top with zaatar, cut them down the middle and toast them. I take the bottom half of the bun and I spread the balsamic sundried tomato pomegranate ketchup, I then place the lamb patty on top, I add a piece of butterleaf lettuce, top that off with the grilled halloumi I drizzle the mint chutney on top of that, I then add a whole roasted red pepper, drizzle a bit more of the mint chutney, and finally top that off with the top half of the bun.

i prefer Chedder. American style cheese used in most normal burgers tastes like plastic. & most Italian cheeses smell & have a strong taste that would mask that of the beef & other ingrediants. It is a burger after all

I make my burgers by raising two Berkshire pigs. When they get up about 260-270 lbs they go to the butcher. I take the part that I'm going to use for ground pork and I don't use any beef, but just make ground pork burgers. The best! Much better than beef, in my opinion. I grill them on my Kamado and start by getting thick slices of red onion and grill those with some olive oil and then when the onions are halfway done the burgers go on. Depending on how hot your grill is, it take 6-7 min. per side. I use Ciabatta rolls that are toast on the grill. I add tomato, lettuce, the onion and some mayo mixed with some chili powder and spread that on the bun and have a little good salsa on the side for a dipping sauce if needed. Try ground pork, instead of beef the next time. You will love it!
