    We have relatives of the rowan tree native here in the Northwest. They are in the genus Sorbus along with the rowan tree, but we tend to call all the trees, including the rowan tree mountain ash. They all have bright orange berries that are rather bitter and said to be toxic. Being a bit of a botanist, I figured sorbic acid is named after the genus Sorbus, which I confirmed on line.

      The answer is it depends! There's no add x = y more days exact type of formula available.

    Can I use this with my homemade fruit syrups? I usually make strawberry syrup/purée and I use them to make drinks in my cafe. The shelf life is killing me as it prevents me from making a big patch.

      You can certainly try it, it will help but if you're trying to figure out what the actual shelf life will be that will take some testing.

    I understand you said use an amount based on the total weight of your recipe. So the amount you put in the flour did you use that amount based on the weight of the flour or based on the amount of the recipe once the wet ingrdients are added? If so, is there a way to figure out the weight before making the entire recipe or can the sorbate be added to the mixture right before cooking? Asking for my cookies and brownies.

      Amount of all the ingredients. You can figure out the weight by weighing out the individual ingredients.

      While it shows some activity up to pH 6 (about 6%), it is most active at pH 4.4 (70%). At pH 5.0 it is 37% active.

    hi there i want to make bird treats with agar agar and seeds and use potassium sorbate as a preservative (to make those seed bells for budgies). how do you calculate the amount needed for that. is the total weight the seed weight and agar agar dry before adding water? Im unsure how to calculate how much I would need to use of the preservative and how to calcluate the total weight of my mix? like in the muffin you had when you have different ingredients of different forms, do you take the final weigh of the batter?

      We recommend using the total weight of the mix, but not sure how that's going to affect bird seed food, since we don't know much about birds.

    Can I add the potassium sorbate dry to my herbs, like basil, and then make a pesto? Or should I weigh the pesto when done and then add in the potassium sorbate?

      You can include it with the water in your blending process. Keep in mind that potassium sorbate does not preserve color.

      You can add it to iced tea. For actual shelf life you'll need shelf life testing.

      This is a shelf life extender, it does not alter the texture or other properties of our recipes. It's also not a stabilizer if you're having trouble stabilizing your mashed potatoes. there are a lot of different potential stabilizers for this application. We recommend reviewing our extensive list of gums and starches and picking out a few to test

    What preservatives is recommended and can be used for mung bean paste. It only last less than 7 with half ratio of sugar. Definitely it would be much safer to eat if it's not containing toxic molds..

      You'll have to test out different combinations to figure out what works. shelf life stabilization is a science and there's no single easy answer for these questions. You can add preservatives, lower pH, etc.

      You can still use regular potassium sorbate in any non-yeasted recipe. The general guidelines are 0.1-0.3% of the weight of all ingredients. The actual usage will vary by recipe and require R&D testing on your part.

      potassium sorbate inhibits mold growth, liquid lecithin helps with maintaining the texture of the muffin. If you just add potassium sorbate your muffin will still go stale.

    Educational. But if yeast doesn’t like potassium sorbate because it’s acidic, then why is citric acid a common dough enhancement ingredient?

      I think you're thinking about ascorbic acid, the usage rates are 0.01%. Encapsulated sorbic acid is used for yeasted breads because they are not activated until baking

    Baking powder but instead of bicarb, you put sorbate? Product suggestions: vanillin and ethyl vanillin, umami boosters (guanylate and inosinate)

    I was SO excited about the potassium sorbate, to find out it is a natural item.
    Then You pointed out it will kill yeast & my bubble burst.
    I make the keto egg white bread & need it to last longer.
    Do You have any other natural, healthful preservative or I need wait for the out come of the encapsulated potassium sorbate experiments?

      Ascorbic acid helps, lecithin helps, and we'll add encapsulated potassium sorbate as soon as we finish testing it since it basically takes a while to wait for things to mold.

      The usage is 0.1%, which is 250g/1000 not 250g/100. You might want to be sure of your math before pedantically correcting someone else.

      preservatives can only be added after fermentation otherwise you wouldn't get the yogurt at all. Try blending the potassium sorbate slurry into the yogurt after it's ready. This is just a general guideline, you'll have to actually test for efficacy and shelf life in a controlled environment.
