    Janie I wanted to let you know that you’re not alone in these emotions and that although it wont be ok for a very long time, you are capable of being strong. My mom has been suffering from the same illness for a bit and as someone in my senior year of high school it is very demoralizing wondering if she will have a seat in my university graduation. I look at it as it will be ok in the end, and if it isn’t ok, then its not the end. Much, much love to you and your mother, your were raised as someone who very much inspires me. I am forever grateful for what you, and this company have done to the culinary world. Whether it be a small or big impact, a business, and content like this is so so so so incredibly important. I believe that this is the future and exposure to these ingredients and easy instructions backing them was something hidden behind industry secrets prior to this new generation. I hope you do better Janie. You are so important.

    I would love to know if you have any tips for incorporating fats or fat soluble flavorings into Gummies. I've been working on the problem myself, but any tips or suggestions would be helpful. (I'm working with soy lecithin currently)

      I don't recommend freeze dried fruit powder. They will rehydrate from the moisture in the gummies

    I'm wondering if you can coat in caranuba wax and then in citric acid?

      Thank you very much.
      You can theoretically coat in wax and citric acid but the mouthfeel is probably not going to be very good because it's going to be kind of waxy and gritty at the same time.

    How long from start to finish should a gummy bear take to make? It takes me about 3-4 days. I live in Washington State for humidity reference. Ive been making gummies for a little bit now using gelatin. The process is relatively easy. Coating them in sugar is where problems arise. Ill let them sit on a drying rack with a fan on low to help the drying process. Ive found that i need to wait for them to feel almost stale before i can package them without worrying about them getting sticky or the sugar getting wet. Any advice or information would help. If im doing all the right things, then right on.

      If where you are there's very high humidity there's not too much else you can do. You can try to reduce the water content in your recipe and see if you can play around with the ratios to still get a good product with less water

      @Modernist_Pantry Thank you for the advice. The recipe im using calls for zero water. I guess my option is to cure them as long as possible and seal them best as possible. Appreciate your videos

    Could I do caranuba wax and then a mixture of citric acix/sugar to prevent the gummies from getting wet?

      That probably wouldn't taste very good it would be gritty and waxy.

It would be really helpful to learn about using sugar alternatives - e.g. monk fruit, allulose, xylotol - I feel like I've had to totally relearn cooking chemistry since my husband developed T2 diabetes that we control through diet. Many Keto followers would benefit as well (think viral noodles!) 😋

    How long does the wax coating typically take to solidify

      If your coating is not curing your gummy may be too wet. Let it dry out for a bit before coating. Also the coating is VERY light

    If you don’t coat them, how long do they last? not keen on having sugar on them or citric acid either as for the wax….better on my car than in my stomach?

      Depends on your storage methods, location, humidity, etc.

    I put the sugar and citric acid gummies in a jar and it all turned into liquid overnight. The gummies are still there but now in a sugary syrup

      If you put them into a jar the citric acid and sugar drew the moisture out of the gummy and it had nowhere to go so it all turned into water.

    I tried the citric acid and sugar, combo coding, and it turned my gummy’s into a pile of goo. What did I do wrong?

      coating might have been too thick or your gummy's water content was very high and it got drawn out by the citric acid

    My gummys are still getting all wet once I apply the citric acid and sugar. Do they need a cure time or something ?

      Your gummy recipe may have too much moisture content

      @@Modernist_Pantry what is the best way to have the least amount of moisture in it, i know just cooking it till 154 degree c is good (not in gummy, in hard candy) but still, mine are still getting very wet, i cooked the syrup till 135. are there any other way to make it normal, what are some additives can you recomend, i used cream of tartar but it doesnt work. even my hard candy that i cook to 150 degree c above, in like 3 to 5 days, in my seal packets they still stick together and get wet and melt in a week, even in airtight bag. please guide me.

      ​@LJ VOB I realized that after about a 2 day dry but if you go more than that they can get very dry but will still even then have a decent gummy-ness to them. They shrink a little and then when you coat them you want to mist them with steam which can be done with strainer over a pot of water and then you can pop them into a mix of citric acid and sugar but I believe you can't go more then 1/4 teaspoon per 1/4 cup of sugar or they will melt because citric acid is an acid and too much will make the gummies turn straight into a puddle.

    I find with the wax solution, they end up leaving oil on your hands when you handle them later. Other gummies using carnauba wax coating have a matte finish and the oil doesn't transfer to your hands. Any tips?

      If your hands are very oily the coating may be too thick, once you lightly coat them let the gummies dry

    Hope that your mom is doing well. I make gummies pretty often and every time I try to coat mine in citric acid and sugar they melt.

      Moisture content in your gummy is probably too high and the citric acid and sugar is pulling out moisture from the gummy instead of from the air. try carnuba wax instead

      none. This is a light coating of food grade carnuba wax. You're not eating a candle
