    Would love to see this done with allulose or inulin as sorbitol has a pretty high GI rating, is hard to find and expensive, and can be disruptive for many people's digestive systems.

    So very, very helpful to have sugar free /low carb details re the alternative sugar reactions when cooking for my husband who has T2 diabetes... thank you! SF soft caramels, nougat, or licorice would be a super special treat to be able to make for him. 🥰 ps we really enjoyed the Serious Keto episode, too!

    I would love to see a licorice candy, of course sugar free, very low to no carbs! Although black licorice is my favorite I would be very grateful to see most any flavor made. Ty

    This is great! Thanks for the recipe (and all the hard work perfecting it)! I'm hoping you'll do sugar free chewy caramels and crunchy toffee. I would like to try and make cinnamon gummies. Will cinnamon oil work as the flavoring? If so do I omit the citric acid?

    The only concern I have is xylitol is fatal for those who have dogs. Too fearful to have xylitol in the home. Bummer!!! Love your videos and info. I was wonder if taffy is doable?

    Great recipe ….try sugar free hard candy ….maybe caramel or toffee …also would a stevia/erythritol blend work with this recipe ?….as it’s the best combination which doesn’t spike blood sugars

    Could you do a side by side comparison of Sugar free gummies, their firmness/textures pros and cons. If I am not worried about animal products what is the best option?

      If you're doing a sugar free gummy this is the only method we've found that really works so there's nothing for us to compare it to.

      @@Modernist_Pantry ok thanks. I've seen other people mixing different gums with Gelatin and sometimes it's just tough to tell what works best. Plus you are wasting ingredients in the search. That's why I value channels that reply to questions. Thanks again.

      I'm having trouble getting the right chewy texture in sugar free gummies. how do i do that without using sweeteners like allulose that cause a laxative effect? Any ideas on an alternative sweetener.

      @@richardmccullough7422 I enjoy allulose but as well too much does cause "problems"...that is why I still blend with liquid Stevie or sucralose to keep up the sweet but lessen the GI impact...it also keeps portion size under control. Haven't found sorbitol yet so I don't know how that effects me.

      You can actually mix a sweetener with a bit of citric acid and then coat the outside which will give it a sourness outside of candy like what sour candy's are like in the store

    Would love to see the softer jelly type gummies, orange slices were my favorites. And does that sorbitol sweetener spike blood sugar? I am not familiar with that sugar substitute.

      It's hard to get that soft texture, but maybe we'll R&D more in the future. Sorbitol is a good alternative to sugar for people with diabetes as it significantly reduces the rise in blood glucose and the insulin response associated with the ingestion of glucose.

      You should be able to since the pectin is gelling with the calcium and not the sweetener.

    Does this mean these would melt if left in a warm place- so not stable shelf life?

      the pectin is thermoirreversible so they will not melt. But they might get tacky and unpleasant if they are left in very hot temps.

    Sadly, pectin has quite a few carbs. I was hoping since they were sugar free i could try them. 😥 they do look good though.

      Pectin only contributes 12g of carbs to the entire recipe which is about 100 gummies. That means 10 gummies would only have a little over a gram of carbs from the pectin.

    Sorbitol.. might as well just use sugar.. raises blood sugar the same.. 😭

      Actually, it doesn't. Sorbitol raises blood sugar but at a significantly lower level than table sugar.

    Please help!!! I bought a package of your powdered sorbitol. It doesn't list the amount of sugar alcohol per serving. I always track my sugar alcohol intake for health reasons. How much sugar alcohol is in each serving?
