I am interested to learn more about what acids work in what types of applications or flavors. When he briefly mentioned use of citric acid for the lemon 🍋 I did find it really bumped up the sour flavor in my lemon bar recipe, which is what I like. I have never used malic acid.

Flavor drops are great for adding flavor without sugar!
Mike and Ikes? Fudge? Nondairy fudge? Hundred Grand bars? Payday? If you could make these nondairy that would be amazing. A good nondairy caramel that has the right texture for candy would be a great recipe.

More attempts at keto licorice! I'm going to try with konjac, but how about other flours aside from wheat flour?
Yeah, I would like it is they would say what else they tried other than konjac powder. I assume they didn't try just that one thing but there's lots of other stuff. My first thought is protein powder maybe worth some xantham gum to help thicken.
We haven't tried everything possible, so there's definitely more to be done

I have always wanted to learn to make butter rum candy. As a child, my favorite Lifesaver was Butter Rum. It is so much better than butterscotch. How can I recreate that childhood favorite flavor?

I’d like to see how to make gum drops that can be baked. I’ve only used recipes with gelatin, but they didn’t exactly hold up in a holiday gumdrop cake. I want to make much more interesting flavors of gum drops (especially butternut squash) to bake into a cake, where the gum drop holds its shape. In fact, a series of candies to be able to use for a holiday gingerbread house sounds really intriguing to me!
You'll need a thermoirreversible gel, so gelatin won't work because it melts at body temp. Try pectin gummies - blog.modernistpantry.com/advice/pectin-candies/

Great video. I would love to see chocolate candy made without sugar alcohol. For the licorice, can you use extracts instead of the flavor crystals and if so, how much?
You can try extracts but since each ingredient is different you'll have to figure out how much you'll need
Erythritol is used in many Keto recipes. I note a cooling affect taste from using that. Is there any food chemical that can be used to offset that cooling affect that you are aware of or other sugar free substitute to use in conjunction with the Erythritol?
We generally prefer allulose

One of my favorite candy flavors as a child was horehound. I would also like something with the tart flavor of old-fashioned dried apricots. The apricots in the stores now seem to have an insipid sweetness.
We actually carry both horehound and apricot flavors for candy.

The problem with Allulose is it does not work in all baking etc.
We prefer as an alternative a combination of sorbitol/xylitol for most applications.
