When ever I put a brisket on the smoker, I also render the trimmings in the smoker for tallow as well. Adds another layer to the flavor when used with steaks, burgers, and such.

If you ever smoke a brisket you end up with several pounds of fat trimmed off of it and I usually put that in there for a couple of hours in a metal pan and let it render and get the smoke flavor and that's the most amazing thing I've ever tasted on a steak.

Great comparison. I mostly cook my steaks with bacon grease. I tried using some homemade beef tallow and I didn't like that at all. I recently picked up a tub of beef tallow and a tub of duck fat so I should really try cooking my steaks with those.

Your experiment is a mute point since you did NOT Wipe Clean the Spoon You used for ladling the various greases per steak. Cross contamination kills any experiment making the end results inconclusive.
I had the same thoughts about cleaning the spoon.

@@cookingwithbigcat if you want highest searing of meat, Coconut oil is your best bet. It has the highest boiling point over all others including avocado oils.
