    Ingredients:
    3 tsp vegetable oil
    2 tsp unsalted butter
    3 to 5 green cardamom pods
    2 medium onions, puréed
    800 grams chicken, cut into serving pieces
    1 tbsp salt
    1 tbsp ginger garlic paste
    1 tsp red chili flakes
    1/2 tsp ground cumin
    1 tsp ground coriander
    1 cup plain yogurt
    1 cup water
    3 tbsp heavy cream
    1 tsp garam masala
    1 tsp freshly ground black pepper
    1 tbsp dried fenugreek leaves (kasuri methi)
    For Tadka:
    1 tbsp vegetable oil
    2 tbsp unsalted butter
    1 tsp cumin seeds
    1 bell pepper, diced
    1 tomato, deseeded and diced
    3 to 5 red and green chilies, sliced
    For Garnish:
    1-inch piece ginger, julienned
    Method:
    Begin with Sautéing:
    Heat the oil and butter in a heavy-bottomed pan over medium heat.
    Add the green cardamom pods and sauté for 1 minute until they release their aroma.
    Onion and Chicken:
    Add the onion purée and cook until it becomes light brown.
    Add the chicken and sear on high heat for about 3 minutes.
    Flavor Building:
    Stir in salt and ginger garlic paste, cooking for another 3 minutes on high heat.
    Add red chili flakes, ground cumin, and ground coriander. Continue to cook for 3 minutes on medium heat.
    Yogurt and Simmering:
    Mix in the yogurt, cooking for 3 to 5 minutes until well combined.
    Add water, stir, cover, and cook on low heat for 12 to 15 minutes.
    Finishing Touches:
    Uncover, stir in the cream, garam masala, black pepper, and dried fenugreek leaves. Mix well and cover again, cooking on low heat for 3 more minutes.
    Preparing the Tadka:
    In a separate pan, heat the oil and butter over medium heat.
    Add cumin seeds and sauté for 1 minute.
    Add diced bell pepper, tomato, and sliced chilies, stir-frying for 1 to 2 minutes.
    Combining and Serving:
    Add the tadka mixture to the chicken handi.
    Garnish with julienned ginger.
    Mix thoroughly and serve immediately.
