How to Make Irish Soda Bread - St. Patrick's Day

Irish Soda Bread

Serves: 8-10
INGREDIENTS:
-4 cups all purpose flour
-1/3 cup granulated sugar
-1 tsp. Baking soda
-1 tsp. Baking powder
-1 tsp. Salt
-1 cup raisins (optional)
-6 Tbsp. very cold, cubed butter
-1 3/4 cup Buttermilk
-1 large egg
INSTRUCTIONS:
1. Preheat oven to 400° You can bake it in multiple things. You can use a lined baking sheet, a 9-10 inch cake pan (lightly greased), or a 12 inch seasoned cast iron skillet.
2. In a large bowl, whisk together your dry ingredients, 4 cups flour, 1/3 cup granulated sugar, 1 tsp. baking soda, 1 tsp. baking powder, and 1 tsp. salt.
4. Now add in 1 cup raisins (optional) and mix until combined.
5. Then add in 6 Tbsp. very cold, cubed butter, and break it up with a pastry cutter or your hands, until coarse crumbs.
6. In a separate bowl whisk together 1 3/4 cup buttermilk, and 1 large egg.
7. Pour your wet ingredients into the dry, mixing until it comes together.
8. Transfer dough onto floured surface, and knead until you see no more streaks of flour. Then shape into a ball, and transfer to a cast iron skillet, a lined baking sheet, or a lightly greased cake pan.
9. Cut a cross in the middle of the bread, and bake in a preheated oven at 400° for 30 minutes, then cover with foil, and bake another 15 minutes, or until a toothpick inserted comes out clean.
10. Transfer to a cooling rack, and let cool for 10 minutes, and then serve!
