    I found the recipe, here are the ingredients and measurements.
    350 grams plain flour, plus extra for dusting
    150 grams wholemeal flour
    1½ teaspoons bicarbonate of soda
    1 teaspoon table salt
    1 teaspoon caster sugar
    450 millilitres buttermilk
    Preheat oven to 200° C or 395° F
    Bake for 30-35 min or until golden brown
    It should sound hollow when you tap on the loaf.

    Soda bread holds a special place in my heart-- it was the first thing I made on my own that wasn't scrambled eggs or pancakes, when I was about 11. The two loaves that the recipe made were both eaten up by my family by the next morning.

    If you don't have buttermilk and baking powder so you're stuck with baking soda, add in either a bit of vinegar or lemon juice. The reason recipe calls for buttermilk is bc it contains lactic acid which reacts with sodium bicarbonate to release CO2 which is how you get that airy crumb without yeast fermentation. You get the same effect with a little bit of vinegar (acetic acid), lemon juice (citric acid), cream of tartar (potassium bitartrate), etc. If it tastes sour it'll work...

    Add a small tablespoon of salt to the recipe, and serve it with salted butter and smoked salmon. That's the irish way of making it, and it's bloody lovely. Goes awesomely with soup, stew or chowder.

      Just pour it on a baking paper and bake it anyway. It will be flat as f , but it will still taste good.
      Just be careful not to burn it.

    chemically speaking could you substitute buttermilk with some other acid to activate the bicarb then use something else to fill in for the missing liquid (regular milk/water)?

      This is an incredibly late reply, but maybe it will help other people that have the same question. Caster sugar is incredibly fine sugar, what people most likely have is granulated, caster sugar is not powdered sugar, it is just really fine grains. I believe you can grind granulated sugar to make or you could just buy it.

      I don't know what kind of recipe you are working with but choose one that incorporates butter. While cold, cut the butter into tiny cubes and spread them around your dry ingredients. Use your fingers and work the butter in by making fists inside the mixture until the whole thing takes on a meal like texture. Then add the buttermilk. From then on it's like any other soda bread.

    mr. Ramsay, I started baking because of you, because I had a dream where I was holding your foot (Hungarian saying for luck: to grab the foot of God :) ) and you were less foul mouthed in the dream than me. So I said that must meant I had it (cooking and baking) and I set off. Now I make beautiful sourdough bread and I think this bread in the recipe could do with a bit more kneading and shaping. :) But you are my inspiration nevertheless. :)

    Traditional soda bread never had a recipe it was made by eye starting with equal parts of the two flours, its simple enough that anyone with some bread making experience will produce it properly every time.

    There's no yeast used in the video, my culinary teacher said that "you can't call it bread unless you add yeast instead baking soda" . So basically is it still a bread or no? I'm a bit confused here . Sorry if my english is bad

      There is active yeast in the flour and culture in the buttermilk. Although this obviously is not a long fermented bread recipe it will have some rise during the bake.

      You can add 1tbsp lemon juice or white vinegar to a cup of milk to make a substitute. It's not completely the same, but it's how I make my soda bread.

      Devin McDowell It is better to add the acid after the milk than with the milk... we're not making cheese here ;)
      have to be careful when adding acids to milk. It tends to separate easily.

    The first time I tried to make Irish Soda bread I forgot the wholemeal flour. It wasn't Ramsay's recipe, but they're all pretty much the same...Needless to say I had this soupy mess and it wasn't until later that I realized my mistake.

      Nobody uses yeast in soda bread! Bar i found one recipe on CZcams where she uses cheese & yeast also (1/4) in her soda bread & lets the whole machine do it which is great, if a little heavy on the calories due to the cheese fat & protein

      dannyboy12357 Sour. Not being a smart arse, it really tastes sour. I've only had it once, but the buttermilk combined with the ammonia from the baking soda makes it taste like it's going off. I'm not a fan, much prefer the italian and german breads.

      Buttermilk actually isn't that bad for you. Buttermilk the liquid that is rendered AFTER the butter has been taken out, so it actually doesn't have much fat. This recipe is high in carbohydrates, but it's BREAD! Here you get the added benefit of knowing exactly what's been put into it, so I imagine it's quite a bit healthier than all the bread you can get at the super market.

      150g wholemeal flour
      1½ tsp bicarbonate of soda
      1 tsp table salt
      1 tsp caster sugar
      450ml buttermilk
