Chocolate Covered Cheese Cake Bites

  • Ingredients:
    16 oz of cream cheese (room temperature)
    1 cup powdered sugar
    1 1/2 teaspoon of vanilla extract
    1 tablespoons of sour cream
    12oz of milk chocolate wafers
    Sea salt (for the top of the chocolate) (See video)
    Instructions
    Cheesecake filling:
    Combine cream cheese, powder sugar, vanilla extract and sour cream in a large bowl until completely combined. Scoop the cheesecake filling in a piping bag and place in the refrigerator while you work on the chocolate.
    Chocolate:
    Place chocolate wafers in a microwave safe bowl and microwave the chocolate for 30 seconds increments until the chocolate is completely melted. Be sure to stir after every 30 seconds. Once the chocolate is completely melted use a half of a teaspoon of chocolate to fill the silicone squares halfway. Place the silicone on a baking tray and tap the silicone container on the counter to remove any air and to ensure the chocolate is even. Next add the cheesecake filling on top of the chocolate and then cover the cheesecake filling with chocolate to fill the rest of the silicone square . Tap the silicone, mold on the counter to make sure the mold is filled with chocolcate and place in the freezer for at least one hour. Remove from freezer and place the chocolate on parchment, drizzle chocolate on top of the chocolate and add sea salt while the drizzled chocolate is still warm. (see video)
    Make sure to keep these treats refrigerated.
