Lemon Bars

  • Ingredients:
    1 1/2 cups all-purpose flour
    3/4 cup butter (softened)
    (1) 8oz package of cream cheese (softened)
    (1) 22 ounce can of lemon curd pie filling
    1 teaspoon of vanilla extract
    (2) 8 ounce containers of whipped cream
    1 cup powdered sugar
    zest of 1 lemon
    Juice of 1 lemon
    Directions:
    1. Preheat oven to 350 degrees. Grease the bottom of a 9" baking pan, line with parchment paper and grease again
    2. Combine the flour and butter with a fork, ensuring that the flour is combined with the butter. Once it is completely combined spread the mixture in your pan. Place in the freezer for about 15 mins to allow the butter to solidify.
    3. Bake the crust for about 20-25 minutes or until golden brown. Allow the crust to cool completely.
    4. Zest the lemon. Next Juice the lemon.
    5. Mix the cream cheese, powdered sugar, half of one of the 8 oz whipped cream containers, juice from the lemon and vanilla extract in a large bowl.
    6. Spread the filling over the cooled crust.
    7. Spread the remaining whipped cream on top of the filling. Garnish with the zest from the lemon.
    8. Cover and chill (place in the freezer for about 40 minutes, and finish the chilling in the refrigerator)
