- GALBI JJIM | Korean braised short ribs
MAKES: 4-5 SERVINGS
4.5 - 5 lb short ribs
⁃I recommend a good quality cut of short rib like prime (or even choice). If you can’t get access to that, you can use the shitty cut like I did. Its still good… just wont be good as leftovers because the meat becomes a little tough.
MUSHROOM WATER*
8 dried shiitake mushrooms
3 cups hot water
GALBI JJIM SAUCE
2 cups mushroom water
1 Korean/ Asian pear (or 1.5 apples if they are small), peeled and de-seeded
1 yellow onion
3/4 soy sauce
3 TBSP sugar
2 TBSP sesame oil
2 TBSP minced garlic
1/2 black pepper
ADDITIONAL INGREDIENTS
2-3 large carrots, cut large
2-3 potatoes or korean radish, cut large
6-8 stalks scallion, cut 2 in wide
3 TBSP rice syrup or sweetener of choice
1. Soak 8 dried shiitake mushrooms with 3 cups of hot water for 2-3 hours. After 2-3 hours, squeeze out any excess water from mushrooms and cut in 1/2 or 1/4 if they’re big. Measure out 2 cups of mushroom water and reserve this.
2. Meanwhile, trim off any excess fat from your short rib. Soak in water for 2-3 hours making sure to switch the water out a couple of times. After your ribs have been soaking, give your ribs a quick blanch. Drain and rinse your (blanched) ribs under cold water. Add them into a large enough pot.
3. Make your gable jjim sauce. In a blender, add 2 cups of mushroom water, 1 asian pear, and 1 yellow onion and blend this. To this mixture, add: soy sauce, sugar, sesame oil, minced garlic, and black pepper. Mix well.
4. Back to our pot with our blanched short ribs, add in your galbi jjim sauce form the step above. Bring to a boil, reduce heat to simmer, and simmer for 15 - 20 minutes.
5. After 15-20 minutes, add your veggies: mushrooms, carrots, potatoes, and scallion. Bring back to a boil, reduce heat and simmer for 60 minutes. Make sure to carefully mix every 15 minutes.
6. After it has been simmering for 60 minutes, add 3 TBSP rice syrup and jujubes (if you are using). Cover and simmer for another 10 minutes.
7. After 10 minutes, un cover, crank heat to high and cook for a final round of 5 minutes. Make sure to baste.
8. Top it off with chopped scallion and sesame seeds. Enjoy with a bowl of rice and kimchi. Bon Appetitties.

im korean, and im quite far from family. theres not a lot of places to buy korean groceries around me, let alone asian groceries! im very thankful for your video because of the substitutes and how goddamn easy and fun you make cooking look! youre also such a great mom and overall amazing person. i really wish you the best.
AJ shouting is the best background music for ur vids loll🤣🤣
Food looks Sooo good btw❤
I’ve never heard of jujube’s before other than the candy you buy at movie theater. LoL I googled it and found that it’s a Chinese date. I’m an Irish gal who was raised by an Italian grandfather (I’d have to write a novel to explain my family dynamics!) who cooked with figs and dates all the time so jujube’s would be right up my alley. LoL There must be different types of this fruit bc I noticed there are some jujube’s that are quite large and look like green apples. I love this channel.. and I learned something new today, how awesome is that!
👍🏼😉
Another Heinz 57 up in the house! 😂
Kalbi-jjim is my favorite Korean dish. This looks so good!!! The only other thing I'd put in is some rice cakes at the end. Soooo good!!!
The end was so wholesome 🥺❤
That looks sooo yummy!🤤
That ending 😂 lol
That looks so good I swear I can smell it 😂
Is that your scorpio screaming at 1:33 ?? 🤣
My husband loves watching you! He had a question do you cook any other culture foods for your family? Like Mexican food, Indian food?
Good question! Yea, I would love to see you make something like a lasagna some time! Yes, or make some bread from scratch.💥💥💥
I think she made chicken parm before.
@@barbj672000 lmao speaking of which I just made a lasagna today! It was hella good
I do but I rarely show it cause ppl love to talk crap when I do- it’s not authentic, it doesn’t look good, etc😂

Can I use pork ribs?
What does soaking the ribs do? And then why why rinse them after the boil? I just want to understand what it dies for the meat. Yk is it for taste or tenderness or neither ans something else entirely. Thanks 😊
It’s a way to get rid of the blood and smell.
Also, rinsing it after boiling will keep your broth clear
First❤
Your black pepper isn’t blackady enough anymore lately?
A.J. got me when he copied you I'm still laughing!!!!
yeahhhh first one!!!!!!!!!!!!!!!!!!!1
Your not Kimberly is

Dats way 2 much work girl😂
A beef facial 😂😂
Meanwhile I’m having frozen fish sticks and home fries for dinner 😂😅😭
I will have a bumper crop of the juju fruit it go to waste every year what can I do with it
Can somebody tell me on a scale of 1-10 how sweet this tastes? I really don't like sweet in my food but if it gives a hint then ok. But I can't figure out how the final product would taste and dont want to risk all this work and money to test. Thanks!
I don't like it too sweet either. I just make it less sweet.
the cut off😭 1:32
Haha you didn't say blackety peppety
Why do you rinse and then throw out the blanched water? Doesn't that remove lots of flavour??
AND THEN BLEND !!!
me:👁️👄👁️
rather than pour your blanched meat and water out all into the sink at once, it's probably better to remove the meat with tongs and then dump the water, that way you don't have to worry about it as much...?
Little ears have no trouble hearing. Everything.
Nooo…this is not galbijjim..
Bon Appetitties!!!!!!!
I can tell that was a proud moment for you right there. 🥹😂
Bet i wont get a pin amd 10 likes lol (dont really do it im not doing it for likes or pins)
Don't think the meat would taste like much after you've soaked it and boiled it🤔
That’s why it’s braised afterward in that sauce. It’s pretty common in Asian cooking to first blanch the meat to get rid of all the scum and make the finished product taste a lot more pure.
@tayazsweetluv
no meat taste. So just the sauce 🙃
@@carolyndabe1616 clearly you’ve never had galbi jjim
@@carolyndabe1616
The same thing is fine with Pho
Even after blanching, and rinsing, the beef flavor still come through from the bones.
why in gods name would you clean the meat multiple times in salt water and then still blanch them? makes no sense imo there is zero reason to even clean them once
Why is the beef soaked and washed that much? Seems like you take away a lot of flavor? Why not brine it instead?
