How to Can Green Beans | Useful Knowledge

  • Preserve your harvest by canning green beans with a pressure cooker. We show how to can green beans easily with a pressure canner. Canning green greens with a pressure cooker does not have to be scary or dangerous. My family has been canning green beans like this for generations.
    We show you how to can and preserve your green beans easily with a pressure canner safely and easy without issues. If you follow our directions and tips, your mason jars will seal every time.
    The method that I use is the pressure canning method for green beans. Pressure canning is necessary to kill botulism when canning green beans. It's not safe to can green beans using the water bath or open kettle method.

    I started helping my mother canning at about 6 years old and I still can foods at 62 years old. This is the first time that I’ve seen beans canned with such a small amount of water in the pot. Had been taught from an early age that you put 3 quarts of water in the pot. We never get too old to Lear different techniques. Thanks for taking the time to do these videos, every one contains a bit of “useful knowledge”.

      Hi. Thanks for sharing!! You have a very similar experience as I do with learning to can early as a child. Since we started the channel, I have been so interested in how folks have performed canning slightly different but with the same end product. Thanks again for sharing.

      I was wondering about that. I wonder if there was any water left in the bottom after the processing? I would assume so if the pressure stayed at 10lbs. I guess it doesn't really evaporate in the sealed pot so it makes sense.

      Hi. We have to tomato videos out there on the the channel. I can using the open kettle method which is old timey but has been safe for my family since the early 1900’s. My grandparents taught me as a child. The updated video answers many questions that I received over the years.

    Hey Jamie, video just in time. We grow Slinderette, 300' of them. We had 6" of rain last week and 90° heat this week. I was raised with the cold pack method. I will have 21 jars ready for the day of canning. Yours look great! Thank you. God Bless and stay safe.

    I thought I needed more water than that!? I was afraid it would boil dry!?? You Always have great information! I'm going to cook up some homemade hickory smoked bacon pieces and throw them in with the beans!

      Yeah my boss was laughing at my about that one. I think only about three folks have notice. I was so tired from canning all weekend that I had no idea. So this a “new” Useful Knowledge way of how NOT to use a jar lifter 🙃😂🤣. Thanks for watching!!

      Hi. You can but since I was pressure canning, I don’t use it. I just add salt when I open and start cooking then.

    Before I attempt pressure canning I watch a lot of video how to.
    I did not see you wipe the rim of the filled Jars.
    Could that be the reason the level of water dropped in a few jars?

      It has more to do with not giving enough headspace or the beans expand under pressure. It’s still not a bad idea to wipe the rims. I did look hard at the rims and at the most I have a was a little water on them. Thanks!!

    I noticed you didn’t put salt into your jars. So you don’t need sail to can green beans? I like your videos your very good teacher

      Hi. Salt is not necessary. The main thing about canning green beans is to get the temp in the canner to at least 241 degrees to kill botulism. That happens when processed at 10lbs for 30 minutes. Thanks for the nice comment.

      😂😂. Yes. You and only one other person noticed. I was so tired from working and harvesting that I grabbed them an never noticed.

      Hi. I was taught a long time ago to use the amount of water shown in the video and I have pressure canned this way for 30 years. Honestly, I’ve never seen anyone use 3 quarts in a canner.

      Same here. I’m not a fan of mush. These beans are not mush at all. We even cook them for another 20-30 minutes with bacon after opening.
