    So glad to watch you teaching your beautiful daughters to be self sufficient, its so important, im so glad my grandmother who lived through the depression taught me & my cousins , along with my father .
    I taught my children also and now my oldest son along with me ( Noni ) are teaching them all the real life importants,
    Gardening, cooking, sewing, and most important to be kind , caring young ladies,
    These days I see so many younger parents , even mid age so worried about their own lives or images their children are spoiled rotten and have no respect even for their own parents let alone consequences for things they do .
    I worry for my granddaughters but they are being brought up right and love church and helping others ,

    I’ve canned beans over open fire also. I stuck each jar in a sock to prevent them from breaking. I thank JESUS for that experience & knowledge. But until I have to again, I will be using my pressure canner….lol. Love watching your channel. GOD bless you & your family!!!

    Oh , nothing better than shelly beans, boiled new potatoes, and cornbread. Many a day I sat where your daughter was shelling the beans to go in the jars. Listening to the grown ups talk about all kinds of things :)

      I sat in the kitchen listening to my mom, her sisters and her mother talkin while the women worked. As long as we were quiet, we could sit at the table or on the stool by the sink and watch. I learned a lot about all sorts of stuff. Many a summer meal was had of fresh produce from the garden. Beans, cornbread, taters, fresh corn, cole slaw, sliced maters and fried okree made a yummy meal!

    I just subscribed to your channel. You and your subscribers are the genuine article. I've read many comments, which warmed my heart. I'm talking real people, unlike the America we live in today. Last year we did Leather Britches and enjoyed the process. It's what our ancestors "kin folk" did back in the day.

    I’m jealous! I didn’t get any green beans this year. I think it’s the crazy weather. I even replanted. I just grew compost.
    Your little one cracked me up reacting to your bean up the nose story. 😁
    I have only water bathed green beans, never pressure canned. Thank you for showing the different kinds of canners and that you use it on a glass cooktop with no issues. I just moved last summer and went from a gas stove to a glass top one. I have definitely had a learning curve adjusting to it!

    Around the table sharing stories and enjoying the task reminds me of my mawmaw's house. I miss those days. Mawmaw and Mama always told me to put towels over the jars right out of the canner too.

    My granny would can green beans without a canner. She would string, snap, and wash them. Then you would take 1 heaping gallon of beans and cook in a brine of 1 quart of water, 1 cup of vinegar, 1/2 cup of sugar, and 1/4 cup of salt for 20 minutes. You pack the heated jars with the cooked beans and ladle the brine over the top to the shoulder of the jar. There will be just enough brine to cover 4 quart jars. Place a lid on them and set them on the counter like you do with your pickle recipe. To cook you would open the jar and pour off the brine, bring them to a boil with fresh water and pour that water off. You then cover with more fresh water and cook with side meat. Edit to add: she would measure the heaping gallon in a plastic gallon tea pitcher, heaped over the top.

    Hi Justro, just wanted to share about how my mom said her mom would can green beans and other vegetables outside in a big "worsh tub" (I still say worsh rags😀) I think she said it was a #3 tub. She would use blue jeans to put around the jars to keep them from cracking. I'm canning 15 pint jars of green beans today cold packing and water bathing them. I'm thankful to God to have such pretty green beans this year. 🙌

    I had Blue Lake bush beans over took the space didnt expect them so big . Finally they died back now I see the eggplant it's still blooming. Oh new planting next year. God bless thank you

    Hey Justin-you’re doing a great job canning your beans-and having your sweet girls assist-and teach them along the way. May. I make a suggestion? I’ve learned this works really well. Pour a splash of white vinegar in the water in the canner. This will keep minerals from the water from adhering to your jars. Your beans look great!

    We always used dish towels and cardboard pieces between our jars out on the fire. I canned tomatoes like that 2 years ago to keep them from going bad on me.

    My beans in the garden didn't do very well so I bought enough to can for the year. Beans and carrots done. Down here in South Louisiana bugs and mildew are bad. All I have now is orka and cucumber. Blessings

    My grandmother was born in 1918. I can remember her water bath canning in 1988 in a number 3 was tub. She just set the tub on concrete blocks, and built a fire under it. Worked great, but I can’t remember why she did it like that. Maybe to keep the heat out of the house that year.

    1:43 - That seems to be standard in Japan - after a rain, it often doesn't help at all. Random things die - the more rain the more things just die or get sick. Makes you wonder.
    It's weird because in Australia where I'm from rain is still a blessing for gardeners. But in Japan where I live now, it's often a curse.

    Putting a towel over them holds the heat in when you want them to cool off is what I have always been told .

    Hello Justin,I was canning some half runners .i didnt use my old canner I was taught on and i was taught to can on gas but this time i tried using a glass top stove and a different canner my beans they did seal but there bent can you tell me what i did wrong ?

      There are a lot of possibilities. Rings too tight or heating too fats or cooling too fast. May be more causes. I would treat them as if they didn’t seal or you might loose them later on.

      @metcalfmills5679, I'm thinking that the towel keeps the temperature more consistent, as the jars are cooling down. This ensures a proper seal. I'm going with your Momma on that one. We live in the mountains of western North Carolina. We could even be neighbors!

    Justin I see that you have two different types of canners which type of canner do you like the best? The one with the gauge and and weights or the one just with the weights?     Hi , I saw a lot of video ppl taking out the ring off the lid , cause they say this way u are sure that the vaccum was properly done. when the lid is keeping by itself with no help from the ring. Care to elaborate on that? Also ppl blanching the beans before , or just putting boiling water to fill the jars. Your take on that?

      I never did remove the ring until this year. It invites rust to form if there is any moisture present in storage. When I put them on to go in the canner I just snug them up and a lot of times when they come out of the canner the ring is loose. I think it is fine to remove. We have always cold packed and are happy with that method. Thank you!

      @@metcalfmills5679 Air is trapped in the closed canner during the process. Air trapped in a pressure canner lowers the temperature obtained for a given pressure (for example, 10 or 15 pounds pressure) and results in underprocessing. To be safe, USDA recommends that all pressure canners must be vented 10 minutes before they are pressurized.
      To vent a canner, leave the vent pipe (steam vent) uncovered (or manually open the petcock on some older models) after you fill the canner and lock the canner lid in place. Heat the canner on high until the water boils and generates steam that can be seen escaping through the open vent pipe or petcock. When a visible funnel-shape of steam is continuously escaping the canner, set a timer for 10 minutes. After 10 minutes of continuous steam, you can close the petcock or place the counterweight or weighted gauge over the vent pipe to begin pressurizing the canner. (See steps 3 and 4 below.)

      Instructions for my all american canner says to exhaust (vent) steam for 7 minutes. i always do 10 to be extra safe.

      It's probably overkill and it does add a good bit of time to the canning process but that's how I learned to do it.

      I share from my experience, not from something I read. I feel it is proofed more that way. To my knowledge we have never done it that way, and have never had a problem.
      I thank you for sharing this with us.
      I would think you would have to be careful with water levels and overcooking using this method, but I may be off. Also I think this would be an added step for those with little experience, to prevent anything loose from stopping up the steam port. Thanks again for sharing.

      Justin, you must vent a steady stream of steam, for 10 min.
      It's part of the whe canning time, for safety. Qts are 25 min.

    My ex husband had a cousin that stuck a green bean up his nose and didn't tell anybody. He was mentally and physically handicapped, his mom noticed his breath was putrid and just town smelling and she took him to the Dr and found the bean🤮

    Well, I still ain't made it through all you videos but I'm a tryin. Why didn't you vent the canner for 10 min? You need to expell that air so the canner works properly and doesn't stress the canner. You're over a 1,000 above sea level where you live and that means your gotta add 1 lb. Pressure for every 1,000 ft over sea level. Check with google for your city/zip code and find out your elevation. I believe you are over 2,000 ft elevation and that means you should be canning at 12 lb. Pressure. Check your canner manual for higher elevation info. You can find manuals online at presto in a PDF file if you lost yours. Your other jiggler weight should be at 15 lb cause you're at higher elevation. You should also take your lid to the extension office and let them test the gauge every year or so. Most people don't know that. If the gauge gets too outta whack it's time to replace it. Mine is nearly 40 yrs old and it's outta whack more than a couple pounds so I had to finally replace it. My mom canned beans for hours in a water bath when I was young. It's a wonder we all survived cause that was bad science. You have to have the pressure to prevent the botulinum spores from producing toxins. Since your beans ain't made ya sick, it means ya ain't had no botulinum spores in your jars. One day they might and you'll be glad you canned at higher pressure. Been nice watchin yer videos.

    Geo engineering is what happened to your food crops. Im in Western Australia and the constant geo engineering here is remarkable, the season totally topsy turvy, and i see it killing two birds with one stone. Convinces the stupid " climate change" really is a thing,(cos they're interfering with it) and total disruption of regular food crops. e.g. my watermelon crop may not be successful, not hot enough as usual this time of year. Ppl need to wakeup to whats happening globally. God bless
