  • I pressure canned the beans the Old Farmer & I picked. Easy raw pack method
Remove ends & any bad spots from beans. Cut or snap into bite size pieces
Pack into clean jars. Add salt, if desired, for flavor. 1/2 t for pints, 1 t for quarts. Use canning salt, as it contains no added chemicals, such as iodine & anti-caking agents
Pour boiling water over beans in jars, debubble. Leave 1” headspace
Process in pressure canner. 25 minutes for quarts, 20 minutes for pints

Beautiful! Thank you so much for taking the time to do the Pressure Cooker steps. I was always afraid of them. I never used one. I helped Mom in the kitchen alot. When we did our beans, not all were canned. We cold packed & froze them. We had lots of beans, mostly quarts size since we were a big family. My Father loved his green beans with a few hefty slices of a Beefsteak Tomato, & a hunk of corn bread. My Brother loved creamed yellow beans. The only ones he'd eat. Sometimes Mom cooked the beans it seemed like all day with a ham bone for flavoring. I loved fresh green beans any way they were fixed. I love the look of yellow & green together. Grandmal made a few pints of dilled beans too. Loved seeing you & the Old Farmer. Have a nice week.

If you freeze your beans, spread them thin on a baking sheet and chill them in the fridge before moving to the freezer. The faster they freeze the fresher they stay. Good for when you don't have enough to can.

People are saying that you will use 1 pound of beans per pint...no way I could fit that much in my pint jars. Maybe if you pureed them first? I barely get 7 ounces. BTW...the ring on the jar is actually 3/4" from the lip, not 1".
