Less than 40 minutes to a baked breaded haddock dinner with salad and sides

Baked haddock with bread crumb topping (around this area it's called Skaneateles style, pronounced skinny atlas) is a fast and simple meal to make. Add some simple roasted veggies and a red onion/cucumber salad with honey-rice vinegar and you have a meal in about 40 minutes or less.

The roasted veggies are carrot, broccoli, and brussel sprout...or any veg you want, toss in olive oil and sprinkle some garlic balsamic vinegar and roast at 350 for 10-12 minutes or to your liking. Add a little more garlic balsamic just before serving.
Baked Haddock Recipe
1 1/2 pounds haddock fillets
1 cup dry bread crumbs
1/4 cup butter, melted
2 tablespoons dried parsley flakes
1 tablespoon dried oregano
1/2 to 1 lemon zested
1/2 teaspoon garlic powder
salt and pepper to taste
Directions
Cut fish into 6-8 ounce portions.
Combine dry ingredients in a small bowl and add melted butter, mix well.
Heat appropriate size cast iron pan or baking dish and oil it.
Cover each piece of fish with bread crumb and bake at 350° for 12 -to 18 minutes.
Fish will be done when it flakes easily.
