The World's Easiest Baked Fish Recipe | Living Off the Land and Sea

  • During the 2020 Corona Shut In, On The Water’s Andy Nabreski receives a wonderful gift of fresh haddock. He shows you how to fillet it, check the fillets for parasites, and prepare his favorite, simple, baked fish recipe.
    Simple Baked Fish
    (Serves 2)
    4 6-ounce haddock fillets
    3/4 cup Ritz cracker crumbs
    1/2 teaspoon Frank’s Red Hot sauce
    1 lemon, quartered
    3 tablespoons dry white wine
    1/3 stick butter, melted
    Sprinkle a thin layer of crumbs into the bottom of a ceramic baking dish that’s just large enough to hold the fillet. Melt the butter and stir in the hot sauce and the juice from a 1/4 lemon. Sprinkle the fish with a bit of salt and pepper, drizzle on some butter, and top it with cracker crumbs until all the fish is just barely visible. Add the rest of the butter on top and around the sides. Drizzle a splash of white wine around the edges. Bake it on the top rack in a pre-heated 425-degree oven until the cracker crumbs just begin to brown, about 12-13 minutes. Check for doneness and serve immediately with lemon wedges and tartar sauce on the side.
    This recipe is incredibly simple, yet amazingly delicious. It works well with a variety of fish including cod, haddock, pollock, sea bass, tautog, and fluke.

    Oh my was that the best baked fish recipe. Really easy. Thanks for showing me how to remove Haddock skin. My Haddock was bought from grocery store, however I did inspected for worms , worm free. Next time I will use the white wine, I didn't have any on hand. The crust on my lord it was crunchy and the butter and the lemon accented each. I sprinkle a little old bay seasoning salt on the top. If have was a food , this baked fish would be heaven. Thanks I know it's an old video, so I hope you see this comment.

    This recipe is pretty easy to follow and I made a huge plate of haddocks tonight, it's really delicious. I used bread crumbles and aluminum pan instead of biscuits and ceramic pan since I didn't have these materials, but it turned out to be a wonderful meal for everyone in my family. Lots of thanks to you for sharing this remarkable fish recipe.

    Made this tonight because I saw haddock at the market and had no idea what the best way to prepare it would be. This was AMAZING! Simple, fresh and delicious. I made it in my airfryer oven (400F for 15 minutes was perfect for my large filet.) Thank you so much for sharing. Your video had awesome information!

    First of all, excellent job fileting that fish!!! This recipe looks awesome and I'll give it a try this coming week. I've recently rediscovered my love of baked haddock and love simple recipes that let the flavor of the fish shine through.

    The fish came in a shoe box, are you sure it wasn't a Sole? ;)
    Okay joke aside, I recently tried Haddock for the first time and I'm hooked. On a whim, I decided to buy a bag of frozen Haddock that I prepared in the oven. if that was delicious, then I can't imagine what fresh Haddock would taste like. I'll have to try this recipe though as it looks quite delicious.

    Professional video. Having this tonight. Lobster fished in Ma for a decade. Used to filet them right on the boat. Few understand the importance of using the light to check for parasites and that sort of thing. I never eat fish unless its fresh either. Grew up with the Captain and his kid eating it often. Thanks for sharing your version. Looks great. Brought back memories.

    You can use this for any white flesh fish, Cod, Pollack, etc.

      Hmmm that's a tough one... tilefish, yellowfin tuna, swordfish. but I'd take bay scallops over any of them...

    I don't believe it was caught in cape cod. You don't have an insane north or south shore accent. You're a friggin' master with that fillet knife dude. I didn't know cod has worms. I've been eating cod since I was a little kid. 'Scuse me while I vomit.

      if you buy it they generally pick it out, if that helps. in most cases cod are pretty clean. it depends on were they come from or have been living.

    Worms are getting much worse in haddock these days. They are getting them from eating seal eggs. More seals=more haddock worms

      Sure you can use this recipe for trout. We tend to smoke trout here at OTW but if you try out the recipe let us know how it turns out.

    I don't understand the whole thing about worms. If you're cooking it then this should be a non-issue. Just like pork with trichinosis, cook completely and there's no issue.

      You could, but this recipe seems to work best with white flaky fish. In freshwater, white or yellow perch, or walleye would probably do better with this recipe than trout.

      @@OnTheWaterMedia I tried it before I got answer. It was not bad at all but I tasted the crackers more than the Trout so I wiped it off with my fork. Then when I bought haddock the next day I forgot Ritz. Amazon didn’t deliver the ovenware like you had so I used a 4” deep one and used breadcrumbs instead. I loved the haddock,& the Trout. I tried a little Tabasco with chipotle. Thanks
