Please correct me but I fail to see the reason for this. I thought the reason you get Maldon is for the structure of the crystals. If you're crushing the crystals, it seems like you're just spending more money and exerting more effort to achieve the same result as using fine salt

We make them almost the same way in the restaurant where i work,only difference is that we leave the skin on,and we use a mix of 80-90%of salt and 10-20% of black pepper.

we use maldon at our restaurant, but crush it in your fingers as you sprinkle it and that sticks well

I do the same thing but I do it in the oven instead of the fryer. It takes about 1/2 hour to get a crispy and golden color.
