    Join us this growing season as we pull things from our garden and show you how to can them. We will be doing 7 different jams, beets, relishes, salsa, sauces, fruit preserves and more! Like and subscribe to keep in touch!
    Banana Jam Recipe:
    5-8 Bananas (approx 4 cups)
    4 Tablespoons lemon or Lime Juice
    4 Cups of White Sugar
    6 Sterilized jam jars with Lids/bands (I used 250mL)
    Chop bananas into pieces. Coat with lemon/lime juice. Transfer to pot and begin to boil. Once bananas start to bubble, add sugar and bring back to a boil. Let rolling boil for 5 minutes, and take off heat. Transfer to sterilized jars, wipe rims, and attach lids/bands. Process in water bath for 10 minutes and let cool before storing.

    Thank you for putting the instructions in the description. I’m making this now. I always can bananas with lemon juice to use in baking later and have used them up to 2 yrs out with no problems.

      Do you mean sterilized? I put them on the sanitize cycle in the dishwasher. You can also put them in boiling water for a couple of minutes.

    Question do the bananas have to be ripe? I want to try this.

      Great question! I'm not sure how ripe they have to be- I just make it with bananas to the point I like the taste of (if that makes sense). I like my bananas a bit softer (I find the flavour a bit better). Totally up to you!

      @@ontariogardening thank you neighbor, I live over in Juneau Alaska. One of my nephews grew up and,lives in Ontario. I never been over there. I’m so going to be trying this next week when I can get to the store. I also like my bananas a bit soft.Have a nice weekend, I might drop you a line to let you know how it turns out.

    Can you reduce the amount of sugar?

      I am not too sure for this recipe; you would have to do some side research. I don't want to say yes, and then have it be unsafe.

      Yes, you sure can. The sugar in this recipe, seems to be a very extreme amount. The amount of sugar, has nothing to do with wether the recipe is safe or not. Not sure why the video poster mentioned this. However, lemon juice should be added to each jar. This will make a big difference, in keeping the jam safe. Sugar does nothing

    Bananas are a low acid food. How did you avoid botulism?

      The amount of sugar and lemon juice in this recipe bring the PH levels high enough to safely can this amount. I would not suggest canning the bananas on their own without either, or lowering the ratios (without using a pressure canner). Hope this answers your question. :)

      You can buy ph strips. Add enough lemon juice to bring the ph level to 4.6 or lower and you're safe to water-bath can.
