- Banana jam is a great way to use all those extra bananas!
Banana Jam
2 cups mashed bananas
2 cups sugar
2 Tablespoons lemon juice
Sterilize jars
Bring bananas and lemon juice to a boil
Add sugar and return to a boil
Bring jam to 220 F
Hot pack jars
1/4 inch head space for metal flats
1/2 inch headspace for reusable lids
Water bath in pint or smaller jars for 10 minutes
Let cool for 5 minutes, then remove
I love to make homemade jams, and eating them. LOL But I never thought of doing banana. Great idea thank you. Happy Homesteading

So is it 2 cups or 6 cups of mashed bananas? You said 6 but the recipe says 2.
Could you tell me how long I can store this jam in the pantry?
It should store for at least a year and a half, ours never stay on the shelf for that long though.
