  • Mindanao is home to some of the most interesting dishes in the Philippines. One of them is the beloved Tiyula Itum, made with burnt coconut. Here's how to make it from scratch.

    RECIPE
    1 Nyog Coconut
    600 grams of beef brisket or beef ribs
    2 thumb sizes of ginger
    1 thumb size of turmeric
    1 thumb size of galangal (optional)
    5 tbsp of Burnt Coconut
    2 tbsp of oil
    2 tbsp of sauteeing oil
    1/3 cup of shallots
    6 cloves of garlic minced
    1 bunch of lemongrass
    4 chillies
    1.5 Liters of Beef Broth
    Additional Water
    salt and pepper to taste

    Whenever I say we put burnt coconut in this dish, my nonlocal friends always respond with “What? Eww that’s weird”. I’m telling you guys, this dish is so unique I can’t even begin on how to describe its taste. All I can say is that it taste like home. Thank you for featuring this dish, Erwan!

    We usually add some galanggal roots, which we call “langkuas” in Tausug, and lemon grass in our marinate.
    Hope you could visit the Sulu islands in the future! There are many beautiful places to see, great cuisine to eat, and beautiful culture to experience in the Sulu Islands. Hopefully, after this pandemic, insha Allah.

      It's "langkawas" in Tagalog and Bisaya. It's rare nowadays, but my Mom still uses langkawas sometimes in ginataan dishes in place of ginger.

      @@TaLeng2023 I don't think they're commercially grown in the Philippines. They're usually only grown small-scale and are only still used in the southern regions (Bicol, parts of the Visayas, Mindanao). They're an ingredient in the Western Visayan spiced vinegar (sinamak) for example. Elsewhere, they seem to have been forgotten.
      I am from Mindanao (though not in Bangsamoro), so we have langkawas in the local markets which are also used in Lumad cooking.
      You might have a better chance of finding it in imported spice stores. The name they are known more commonly in English is "galangal ginger".

    Im from mindanao, and from Tausug tribe. This soup is served in every ocassion especially traditional ocassions. There is actually a Ramen house in NAIA that served this soup they call it black soup. This will always be the best of the best mindanao's best. Thank u for patronizing this recipe ❤❤❤

    My cousin's husband is from Manila. When my cousin brought him here in Zamboanga, we let him try this dish. Tiyulah itum became one of his favorite until now.

    Thanks for promoting one of mindanao’s best, it’s more delicious if the coconut meat where burnt through the use of charcoal, then when you blend it, it comes with turmeric, garlic, onion and chili 🌶 😋 this can be found in Palm Grill Restaurant in Thomas Morato also 😋

    I rarely travelled around the Philippines. But after being in America for 4 years and realizing I've travelled more places here than in our country, made me want to travel the Philippines. Zamboanga is definitely one of the places on my bucket list. Oh man. I can't wait to go home soon! Hopefully by the time I graduate in May, travel bans would have lifted already and I can come home! :D I miss you Philippines!
