HOW TO MAKE PIPIS ITUM | PAMAPA ITUM

- Pipis itum / Pamapa itum or Black Spices is charred coconut meat mixed with spices like turmeric, garlic, galangal, ginger and chili. That gives the Tausug dishes that uses it a unique taste. Pamapa itum is the main ingredient of Tiyula itum (Black soup), Chicken piyanggang, Junai, Giyataan manok etc.
In this version of Pipis itum / Pamapa itum, we are only going to use Charred Coconut meat, powdered Garlic, powdered Turmeric, and salt. All other spices mentioned above you can add it while marinating, rubbing and on the process of cooking the beef, chicken or goat or you can just add all of it together depends how do you want to make it.
Ingredients:
• Burnt Coconut meat
• 1 tbsp. Turmeric powder
• 1 tbsp. Garlic powder
• 1 tbsp. Salt

Does your kitchen smelled like burnt coconut after? Wanna make this but im afraid the coconut smell will stick for a long time 😅
Just turn on the exhaust fan or just leave the windows open 😄. For us we love the smell of burnt coconut, it brings back memories from the past when we where still at the province. Try to make it sometime.

Can i freeze this for future use?
Honestly we never tried freezing it, however we most of the time just store it in the ref. If it is very well sun dried we keep it on air tight container and just leave it on the shelves same as other spices.
