    Pork Birria
    Ingredients:
    500 grams U.S. pork shoulder or Boston butt, cut into 2 inch pieces
    1 large red onion, diced
    10 garlic cloves, minced
    1 cup water plus 1 chicken bullion cube dissolved
    1 teaspoon cumin
    1 teaspoon onion powder
    1 teaspoon oregano
    4 whole cloves, crushed
    2 bay leaves
    Tacos:
    250 grams mozzarella or pepper jack cheese
    8- corn tortillas
    Chopped cilantro, for garnish
    Procedure:
    1. Place the U.S. pork, onion, garlic, cumin, onion powder, oregano, crushed cloves in a bowl. Marinate for at least 30 minutes.
    2. Add the marinated U.S. Pork in a pot. Add Chicken broth and bay leaves, stir, cover, and cook for 2 hours till fork tender.
    3. Open your pot and with a spoon, take out the fatty liquid that is on the surface of the stew and place about ½ cup into a bowl.
    4. With tongs, take out the meat and place on a plate or shallow bowl and shred. Place the rest of the liquid in small separate bowls.
    5. Make the tacos: In a pan on medium heat, add a bit of oil. Scoop some of the fatty liquid with a spoon and place about 1-2 tablespoons in the pan. Place the tortilla on the pan and cook on both sides, making sure the liquid gets on both sides.
    6. On one side of the tortilla, place the meat and cheese and then fold the tortilla over to form a taco. Flip the taco to the other side and keep flipping until the taco becomes crispy.
    7. Serve the tacos and garnish with cilantro.

    1 cup (240 grams) mayo
    finely chopped cilantro (leaves and f
    2 tablespoons (30 ml) freshly squeezed lemon juice
    Zest of 1 lime, grated
    2 large garlic cloves, minced
    1 teaspoon fine sea salt
    ½ teaspoon freshly ground black pepper
