Munchies: Jonathan Benno

  • We went to Lincoln Ristorante, one of Manhattan's ritziest restaurants, to chat with head chef Jonathan Benno about the intricacies of homemade pasta and the art of modern italian food. Before opening Lincoln Ristorante in 2010, Benno worked with Thomas Keller at The French Laundry in Napa Valley and at New York's Per Se. It's fitting that, for this episode of Munchies, Benno chose to visit chef Nick Kim, who trained under Masa Takayama and then worked across the hall from Per Se as the head chef of Masa. We had some of the best sushi we've ever had-and some of the best food we've featured on this show, period-at Kim's restaurant, Neta. After enjoying a 15-course omakase with Benno, his sous chef Chung Chow, and Mac Truck owner Dominick Tesoriero, we headed north for a beer at Peter McManus Cafe and then a late-night tripe cutlet sandwich at Lincoln. This is New York fine dining with two of the most important fine dining players. Enjoy.

    This guy is amazing. Not a drop of alcohol, no party personality, but still holds the audiences attention. Each bite you see him take you can tell he is truly analyzing the experience. A person that has the mind of a scientist and the palate of a chef; you cant ask for more. A pure master of his craft!

    I'm an avid fan of Munchies, but this was by far the most enjoyable episode I've watched. It wasn't just about getting belted, and eating 'stuff' - those guys ate and, more importantly, appreciated every mouthful. There was no need for swearing, boozing, or letting-loose.
    It felt like this was actually about food - and thoughtfully so.

    Easy going, professional but still laid back, and great looking food. This is a solid episode, guys. Too bad I found it pretty late.

    I really respect Jonathan Benno. You don't need to be this "over-the-top" personality to be a chef, especially a GREAT chef. The cliche can be tiring. He has a certain kind of gravitas and intelligence that is not at all pretentious. It's admirable and very much appreciated.

    My Grandmum is Italian, and I've been to Italy a few times. This food looks good, but the real art of Italian cooking is simplicity. If you took these recipes into the heartland of Italy, the locals would most likely turn their noses up to these 'modernised' interpretations of their traditional recipes.

    I have worked at a really nice caterer throughout high school and have been exposed to what you could call "rich people food." It's expensive for a reason. And what the guy said about the "fourth bite" is absolutely true. A well done tasting menu provides the most satisfying meal I have ever experienced. Don't get me wrong, I enjoy a good burger or a big bowl of pasta with nothing more than some sauce and salt, but there is another level of food. And it's amazing.

    You may have never eaten in a restaurant "like that". But When you have up to/more than 10 courses you defiantly get your fill. It's not about gorging out but instead the enjoyment of food and drink and the thought that's gone into it.

    This guy isn't exactly a wild and crazy guy, like some of the other chefs featured on this show. He's not getting hammered and slurring and saying inappropriate stuff. Fact is he's older, and he's incredibly good at what he does. He seems almost like a monk in fact. In a GOOD way. I'd like to eat his food.

    I agree with you. It's just a way to glorify something everyone should be thankful for having at all (eating food.) Most people on Earth do not have access to clean food, water nor toilets. Also, congratulations on the BJs!

    Of all the one's I've seen, best one I've seen. Most of these episodes are adults acting like 14 year olds getting drunk for the first time. Please, there is more to life than getting blindingly hammered. How can you even properly enjoy some of these fabulous meals when you can barely stand. Andrew Zimmern showed tremendous food & great time without getting blitzed. The tatt'ed Canadian guy that they show a lot in other episodes is so boring: drink excessively and say things an adult shouldn't say but get away with it b/c I'm drunk. This is a great video.

      Guess we just wouldn't agree then. I love the episodes where the chefs and owners get together and go drink/support other places in their area. I love the community of it. If I was to work as a chef, I'd want to work for those people over a fine dining place.

      LucidDream they go and support local businesses in all the episodes.Going out and eating and drinking is a part of life,going out and binge drinking till you throw up while OK when you're a 21 year old but there is far more to life than binge drinking. In addition, there is such spectacular food they are eating which is a shame how can you enjoy it when you can't even feel your tongue. I agree with you that it's great when the chef's and owners go out and hang out. Daniel Boulud has a show like this. This is a slower paced one and I think I enjoyed it more after watching a bunch of the other drink like fiends ones.

      Sure, there is more to life than drinking...but what point are you trying to make? The show is called 'Munchies'. Ya know...when you get drunk or high and want to just enjoy some food? Most of these places are on point with what goes on in most restaurants today. Stressful day working, get off, go let loose. There aren't many episodes of people binge drinking or throwing up that I've seen. Sure, lots of drinking...but that also ties in with what the show is kind of about. Also, I dunno what you're going on about not being able to enjoy food when you're drunk. That may be true for some people, but that's not what happens for me.
