This is what actual high level dining looks like. No screaming, no swearing - just a bunch of very, very skilled professionals orchestrated by a passionate, talented and hard-working head chef.

However I do believe that due to the "celebrity chef" FAD that has been going on for the past 20-30 years there has been a mass distortion of the public's perception of fine dining. I mean to say that they see fine dining as some sort of ultra high-heat, swearing and cursing filled environment, whereas in most cases it is actually quite the opposite. If you absolutely have to swear as a Head chef that means that you have LOST control, not that you are IN control. That is what I meant to say.

Kitchen staff are incredible. 9AM-6PM making pasta in the basement, every day? That takes a different type of dedication. Much respect to all cooks and chefs!

I love when people love the little parts and pieces of what they do-- the pure excitement that Chef Secchi had when sharing the sea urchins shows how genuinely and lovingly a person can appreciate food down to their individual ingredients!

I felt so happy when I saw they had a chart with the food allergies of the tables. As someone with food allergies just seeing that extra step makes you really appreciate the care and dedication they put into their craft.
This guy is my favorite chef I've seen on this channel. He is so involved with not only his staff, but also the camera crew. You can tell how much passion he has for his craft and it is a delight to see.

I had the opportunity eat at Rezdora a couple weeks ago. Absolutely fantastic food. Can’t recommend enough. Definitely try the Grandma Walking Through the Forest pasta. Unbelievable dishes.
Love to see guys like this getting showcased. Whether its the food industry, a carpenter, a guy picking apples in a field, people like this are just special kinds of people in this world and its so fun to see them share their passion.

You can tell that he's in love with his passion for food, very inspiring.
The chefs energy is so nice he has an intensity to him that you know he is full of passion but it’s not overly intense that it bleeds into the kitchen and makes everyone feel like they are unable to make mistakes. Seems like he is extremely valuable to the operation.

There is something beautiful in it when Italians speak about food. It's just pure love of the ingredients. I am not sure if any nation can do the same
Any nation can do the same. The spanish, and in some cases the french, are just as mindlessly adherent to tradition and maintaining the culinary status quo.

@@sapphire7888 No. People do that about the french, and the spanish as well. Anyone that touts their particular nations cuisine as the best and above everyone else, usually gets slagged.
If it seems like italians are getting the worst of it, it's usually because they're the ones making the most noise, by being utter arseholes to people that don't cook some kinda pasta dish or whatever else italian inspired food to their precise demands. Italians, at least online, demand that *everyone* respects their culture, yet they aren't willing to do the same.
I love the way how he shows his passion for his food and every ingredient he uses.

I could watch Stefano Secchi make pasta all day. I loved him at first sight since the Eater docu came out but I also love a good Bon Appetit take. Stefano seems like an overall nice guy and I want someone to look at me and light up the way he cracks open a fresh sea urchin. Damn, please take me here.
