I truly respect old world craftsmanship, always admire diligence in appearance and fit. You are definitely a craftsman. With that said, and considering time is valuable and sometimes more modern brackets are exponentially more robust than wood to wood fitments, I’d point to the use of metal prefab brackets between your top plate and rafters. Sold by most lumber stores, they are called “18-Gauge ZMAX Galvanized Hurricane Tie”. Sell for $1.25 each. Huge time saver, bearing strength of 1100 pounds each.

I just stumbled upon your video, and glad I did. The way you explain each step in simple terms is outstanding, especially for those like myself with limited building experience. This video would have been a game changer for me when building my 10 x 24 firewood lean-to shed last summer. The idea of doing birds mouth cuts intimidated me, so I used hurricane ties instead. The way you explained it and the detailed use of the speed square (never knew how to use one) was excellent and I would have given it a go. I just kept shaking my head while watching this and kept thinking, I would have done a few things differently with my shed (like adding the purlins to accommodate a longer eave) cause you explained its so well. I have only found a few channel to subscribe to, and you have now been added to that list! Thanks, and looking forward to checking out your other videos.
