Oh my god the optimism we all had.
I think actually dry instant noodles definitely have an advantage, even though one would think that fresh ones would be better: If you boil it all together, they are going to be much better at absorbing the flavour of the stock/soup because they are getting re-hydrated instead of just warmed up, meaning the broth really penetrates into the noodles.

螺蛳粉 snail rice noodle is supposed to be a soup noodle, I never had this tomato flavor but the original version has a lot of broth in it. Tomato flavor is a new creative innovation, the original version is very spicy. Also this dish’s smell could be terrible to some people, that’s because the bamboo shoots are fermented, and not everyone like that distinguished smell. Be aware of that when you try it, if you don’t like that funky smell you can skip the bamboo shoot pack.

I personally thought the tomato flavor was really bland when it was in soup form, so whenever I have that flavor I have it dry. The mala flavor I definitely have in soup form though

@@Liramek not really, it's proven that it's preservatives that is actually sticking in the noodles so all he's actually doing is trying to not die from too much preservatives even though he consumes a lot of sodium from these noodles.

26:47 I def agree. Sometimes I even cook Korean noodle bit longer than recommended so it becomes bit slimy and soagy as it soaks the water. There's less soup, but the soup is dense and flavorful with more boiling time. I was not into slimy, though, when I was younger. And by the way, you picked the wrong kind of K-noodle lol.. there's really good ones out there.
