That little knife is evil. And beautiful. I had to cut in a safe edge as I kept catching the tail of the blade edge. I didn't want to but I like not bleeding everywhere.
I have 3 knives I can't life without.
My Big Swede I've had fpr 20 years and still is the best.
Your chopper, I keep her clean and sharp, holds an edge very well.
And this little beast..... she's the very devil to not slice myself.
I love all of them and just finishing up a scabbard for the little devil. Oh trust me I love this.

What makes a good risotto is to cook it with the liquid of the rest of ingredients (meat, fish, vegetables...) instead of boiling it separately.
In the video, the rice will be filled by just water, while on a risotto it would be filled by broth, the real flavour explosion.
