So this is a Roman version to use bucatini. In Amatrice they use spaghetti and no olive oil since guanciale has enough fat to be rendered.
It is so sad that Amatrice is not on map anymore after 2016. Thank you for keeping memories and traditions

I will have to try this. Nice to see a big pot of water to cook the pasta. Too many people use just a few inches of water, but they aren't Italian.

Bucatini all'Amatriciana was, quite literally, the first truly authentic Italian dish that I ever did. It is still my favourite pasta due to its ease and simplicity of preparation. My only difficulty is the fact that (possibly due to this stupid virus) I cannot get bucatini where I live. I may need to start ordering it online!

At 2:38 my dream comes true! What we're talking about here is HOG JOWL, so popular on New Year's Day! I was JUST THINKING that I don't see any Guanciale around here, have never heard of it... but we have lots of Hog Jowls! Smoke flavor, sometimes you can find peppery bacon. BUT there is some nice fatty hog jowl in my refrigerator right now! I feel lucky. Might actually go look for some imported tomatoes, just to celebrate. This seems very close to actually happening. Thanks!

Pasquale is the best Italian chef on you tube, i hit thumbs up before i watch the video, i can always change my vote, but never had to. This recipe is great, i like bucatini as it is like a hollow spaghetti, the sauce gets up in there, delicious. God bless everyone & stay safe

After cooking the guanciale, I set it to the side and use the fat to sauté some onions and then proceed. At the end I add my fried guanciale to keep that crisp texture. To each their own, but then again mi ha insegnato un Abruzzese!
