It’s crazy moist and fluffy from all that buttermilk, carrot pulp and brown sugar! The oil gives it such an amazing fluffiness! I hope you all enjoy this carrot cake as much as we do!

Your family will want you to make it all the time. Girl, I made this cake for my husband's birthday and wow!!!! BEST CARROT CAKE EVER. I made just as written. Perfect. Oh you don't need to buy buttermilk. To make buttermilk simply take 1 cup of Milk minus 1 tablespoon and replace it with 1 tablespoon of white vinegar = Buttermilk. Thanks so much. This is now my go to carrot cake and the cream cheese frosting is terrific, not to sweet and not to sour. EXCELLENT. Did I say I liked this carrot cake........mmmmm

@@bumsomejoeyy2493 I use whole milk but I think you can use any cows milk. This is the recipe I use to make buttermilk:
INGREDIENTS
1 tablespoon of freshly squeezed lemon juice OR white vinegar
1 cup of milk of choice
INSTRUCTIONS
Pour milk into a bowl.
Stir in a tablespoon of lemon juice OR white vinegar into the bowl with the milk. Stir to combine.
Let it sit for 5 minutes until the milk begins to curdle and becomes acidic.
Then just use it in place of buttermilk in the recipe as it calls for

@@lynZy05 sorry I'm late, you can just that you'll have the adjust the baking- start with 1.5 times the original time first and cook by 15mins if the toothpick is still wet

This cake was AMAZING!! Made this last night. I did add nuts to the batter. This was the best carrot cake I've ever eaten. My husband agrees. He even got up at the wee hours of the morning and had another slice. Will definitely be making this again! Thank you for this great recipe!

This is definitely the bomb! my friend requested for a carrot cake and i typed in carrot cake divas can cook and voila! when i saw ’the bomb’ i quickly clicked it cause i also tried your `moist banana bread the bomb’ and it is the best! I just added some crushed pineapples and reduced the amount of sugar, some walnuts and covered it with your cream cheese frosting recipe and some pecans.. thanks for sharing!

The best carrot cake!! I’ve done this recipe multiple times and never fails! I use 3 6- inch pans so they can be a little thicker and it’s perfect 🤩

after many carrot cake failed, I finally found the PERFECT ONE!! Thank you so much for sharing this. I used half of all ingredients because I wanted to make a small one and oh boy, the cake turned out so moist, fluffy, colorful and so flavored. My family also loved that. Next time I will make a bigger size cake! I will never use another carrot cake recipe!

I made this recipe yesterday for one of my coworkers. OMG!!!! He said he loved it. I love your recipes. I only made two changes....I did not add the clove and I did two 9 in layers instead of 3. I always go to you tube or your site for ideas when it comes to recipes. Keep them coming. Do you have a good coconut recipe you can share? I am looking for a good recipe to try.

such a delicious fluffy and soft cake!! also a tip for anyone making this, don’t overfill your pans at all!! it’ll make it very raw in the middle but cooked everywhere else, i recommend putting tin foil over the pan and baking it for a little longer to get everywhere cooked.

AWESOME thank you! The flavors in this cake really is divine. I will never eat another carrot cake with nuts raisins, pineapple etc.,. This recipe doesn't need all that. Without all that you can taste the sweetness of the carrots. I put toasted walnuts on top and we tore this cake up. Lol.
WARNING make 2 you wont regret it. One batch of the icing is enough for 2 cakes. Thanks again family and I give 5 stars.

Thank you for another great cake recipe! This was hands down the best carrot cake I’ve ever made! Wonderful flavor, super moist but not too dense and perfect amount of spices! Perfect for Easter!!
This cake is moist and delicious. I added pecans it’s so good.
For the frosting I used
2 blocks cream cheese
1 stick unsalted butter
2 1/2 cups powder sugar. That was the perfect amount to frost the cake. Next time, I think, I’ll use 3 cups powder sugar for slightly sweeter frosting.

I had been making the same carrot cake recipe for 14 years. When I saw this, I knew I had to try it- I'm so glad I did. Absolutely delicious!!! Soo moist and good. The carrots 3 ways is genius, I can't believe I didn't think of it!! Try this, you won't regret it!!
I did add just a dash of cinnamon to the frosting, and it was amazing.
I initially didn't want to make this cake because carrot cake generally sounds, well...meh and boring (emphasis on "CARROT"). But I gave this a shot to have some variety in my life instead of the good old fool proof chocolate cake that even if its slightly burnt will still pass the taste test. So i went ahead and made the cake and now let me say this...everyone loved it! Even people who were never a fan of carrot cake, were amazed! It turned out beautiful! Thanks for sharing your recipe.
I've been looking for a carrot cake that is moist but still holds a good crumb. This looks perfect, definitely gonna try it out. Although if someone could please leave the metric units for the recipe it would be much appreciated.

I didn't have any buttermilk, so I added a teaspoon of lemon juice to the regular milk I had and it worked. Thank you!!!!!

SOOO GOOD!! 😋😋😋 My family loved it! I made a couple adjustments (made it 1 layer, used less frosting, only 1.25 cups of sugar for frosting, added sliced almonds and almond extract, and used homemade buttermilk using soy milk and ACV), but this recipe was FANTASTIC. Thank you so much!
