- I used a different puff pastry sheet from last time and tweaked just a couple things to simplify it.
// INGREDIENTS //
- 2 large gold potatoes, cooked and mashed (I pricked them with a fork and cooked them in the microwave for 8 min, flipping halfway)
- 1 red onion, finely diced
- 4 garlic cloves, minced
- Small knob of ginger, grated
- 2 green chilies, finely chopped (+/-)
- 1/2 cup frozen peas
- 1/2 tsp cumin seeds
- 1/4 tsp fennel seeds (optional)
- Pinch of hing (asafoetida) - optional, I didn't use it here since a lot of people don't have
- 1/4 tsp turmeric powder
- 1/4 tsp red chili powder (dark, kashmiri, or paprika) (+/-)
- 1/2 tsp garam masala
- 1/2 tsp amchur (mango powder) (can sub with lemon/lime or add a bit of both!)
- Salt to taste
- 1 bunch cilantro, chopped
- Puff pastry sheet, thawed in the fridge (I tried Dufour and Wewalka and preferred the latter)
- Egg wash (1 egg w/ a splash of water) -can sub butter
// RECIPE //
1️⃣ Add oil to a hot pan, & then cumin and fennel seeds. Once they start wiggling around, add onions, garlic, chilies and sauté for a min.
2️⃣ Add turmeric, red chili powder, garam masala, and salt - sauté for a couple min, and then add peas and potatoes. Cook for a few min.
3️⃣ Top with mango powder / lime or lemon, and cilantro.
4️⃣ Spread over a large plate / tray and cool in the fridge for 20-30 min. Alternatively, you can also make this ahead of time.
5️⃣ Preheat your oven and roll out your puff pastry sheet on a flour dusted surface (if it doesn't come with parchment paper) so it doesn't stick.
6️⃣ Quickly spread your filling mixture, leaving space on the edges to seal. Top with more cilantro.
7️⃣ Gently start rolling into a tight log.
8️⃣ Optional - cover in plastic wrap and pop in the freezer for 10-15 min so it firms up to make for easy cutting and handling.
9️⃣ Cut (in a sawing motion) into half inch or so rolls. Place on a parchment lined tray and bake for 15-20 min until golden. You can also brush them with some melted butter for a glossy finish.

@@kpe02 I haven’t done this but I think freezing the rolls before you apply egg wash and bake can be frozen for later.

I know it's not in this video but when you make your daals, why do you "temper" the spices etc separately? Is it so you can make the spicy-ness separate for different people?

I made this and they turned out so good!! Since my family doesn’t eat eggs I substituted the egg wash with milk wash and got a similar brown color and flaky texture!

@@kashnimago2096just milk will do! I use a milk wash to make bread / pav, and it gives the same golden colour as an egg wash

People it's better if you have spices from an Indian or Pakistani store. The spice taste differs and you'll get the authentic samosa taste if spices are from the country samosa is dearly devoured in.
YES!!! Whenever we visit the US my mom complains about how spices from Walmart or any regular grocery store just don’t have the same popping taste as the ones back home, we always go to ab Indian grocery store if it’s nearby
Yumm. Very nice. Also sprinkle a teeny bit of carom (ajwain seeds) on the pasty. And roll/press it in. Love the ajwain flavour of the samosa pastry/wrapper.

@@CLB___I am an Indian. My masala dabba contains mustard seeds, cumin seeds, turmeric powder, chilli power, split Black lentils (urad dal) and chana dal and whole red chilies.

i am deathly allergic to garam masala. it’s the worst thing ever. i can’t ever go out for indian food BUT i’ve been making it at home for myself and jesus christ- indian food is exquisite. i’m from texas and indian food is not very common so i’m extremely thankful for creators who post videos sharing their culture.

This was great! And I'm glad lesser known Indian food is getting so much attention! The cuisine in this part of the world really is diverse, complex and nutritious. Please do show some more south Indian recipes (I saw the curd rice episode!). For some reason south Indian kootus, kozhambus, poriyals, usilis etc. are not so popular in the west, although they are all dishes with complex, delicious flavors that celebrate vegetables. They may not fit the culinary beauty standards of the west, but I heard you're a fan of ugly delicious food 😋
Try a classic Kootu (coconut, peanuts, coriander seeds are the main flavors) and you'll see what I mean about flavourful complexity. Hit me up for more details if you need them 😊
