I always salt my cabbage. I stopped buying lettuce (it goes bad too quickly) for tacos and instead do salted cabbage. I squish the cabbage with a fork but squeezing it would also work! Def changes the texture of the cabbage and is easy! I usually cut the cabbage on a mandoline and put into a bowl, salt it, and let it sit for 20 minutes while I make my taco meat and fixings. I always have cabbage and eggs in my fridge! I love fried cabbage with onions in a cast iron pan. Cabbage is an underrated veg, for sure!
