  • Hifiridzi/Highfields Dish Recipe
    Ingredients:
    1kg Brisket Beef
    700g Leafy Greens Vegetables
    300g Chopped Tomatoes
    1 small/medium onion
    2 cloves garlic
    Salt/Pepper
    2 tbsp cooking oil
    1tsp medium curry powder
    Step-by-step instructions per video;
    The dish is famously known as Hifiridzi or Highfields because it originated from the Highfields area of Harare in Zimbabwe.
    The main ingredients are simple (being beef and leafy greens) but the recipe techniques make a delicious dish that is usually enjoyed with classic plain sadza.
    Ideally, the leafy green vegetables need to be fresh. Here, I harvested some from my garden and I sliced the vegetables thinly. I’m using 1kg of flat brisket joint beef, but you can use any cut of beef you choose.
    First, I start by frying the beef, or "kukanga nyama" as we say in Shona (add salt and pepper at this stage). The frying process is a very important step if you want the best outcome for your recipe. You want to take your time frying the beef until it’s nice and golden brown.
    Add chopped onions and continue frying until the onions soften. Then, add 1 tsp of medium curry powder, and chopped tomatoes. Now, cover the pot and allow the beef to stew until tender.
    (Meanwhile, I’m cooking my sadza at the same time, which I’ll serve with the dish). We do have a full step-by-step "How to cook sadza" video on this channel if you need to see more.
    Now, add the leafy greens, mix, and cover pot for about 3-5 minutes. You want to maintain the color of your greens, so make sure not to overcook them. Now, our dish is ready to serve.’

    1:06 That's exactly like Swahili. We say kukaanga nyama to mean the same thing.
    In Kenya, we cook a similar meat & green vegetable dish & serve it with ugali which is a firmer version of sadza. Im going to try your recipe.

    • @zimfoodnetwork
      @zimfoodnetwork  Před měsícem +2

      That’s very interesting to hear this .. Swahili and Shona words are almost identical I know other words and phrases that are also the same.
      Thank you for sharing. I’m quite amazed how a lot of us Africans seem to have more in common than we realise and we also unknowingly have recipes like these in different countries- would be interesting to learn how this happened in the history we share.
      This proves how much more related we are as a people. May we continue to grow and learn together as a United Africa! Best wishes with our recipe when you do try it, let me know how you get on.
      I’m also interested in trying your Kenyan Ugali, I’ll find a recipe here on CZcams and will also be trying this :)

    • @zimfoodnetwork
      @zimfoodnetwork  Před 4 měsíci +1

      Ohh woww! I didn’t know our Tswana (Botswana) neighbours also cook this dish. What do you call this dish in Botswana? 😊 it’s interesting how quite a lot of the Eastern/Southern African countries share similar cuisine. But then again history tells us the Tswana (Botswana) 🇧🇼 are originally from the Bantu Tribe just like most Zimbabweans 🇿🇼 I also recently learned they make this very dish in Kenya 🇰🇪 too (also Bantu origin). Thank you for sharing @boldpicturesgarderners it’s interesting you call the (porridge) shadza, and in Zim Shona language we call it (sadza) the words sound similar too. Proof we’re definitely more related as Africans than we realise right 😅. Thank you for watching and taking the time to comment! 👏👏

    My husbands zim and I'm going to try this recipe! How long do you cook the beef for??

    • @zimfoodnetwork
      @zimfoodnetwork  Před 2 měsíci

      Great!!! 😊 It all depends with the cut of beef you’re using they all cook differently time wise. You can use any beef cut for this recipe just make sure you cook the beef until it’s very tender and well cooked, then you add the seasoning and veggies to finish off as I did in the video. Any further questions just ask. Hope you and your husband enjoy the recipe, good luck!

      Did you boil the beef first before frying it ?

    • @zimfoodnetwork
      @zimfoodnetwork  Před 18 dny

      @@user-ed5ci9og8u I did not boil the meat first with any additional water because usually the meat already has its own water weight so I just started by frying it with a bit of cooking oil this way we can get all the beef flavour through browning the meat, the water weight is then released from the meat during this frying stage. Depending on the cut of beef, you can add more water at this stage so as to cook through the meat properly or you can allow the meat to cook through with its own water before frying again …. This is what I did here.
