One of my favourite Mexican dishes TIKIN XIC (Yucatecan fish dish)

I travelled a long way to learn how to make pescado Tikin Xic which is fish marinated in achiote, sour orange and freshly ground pepper. It’s a simple, classic Yucatecan dish that’s healthy and delicious.
We made the achiote ourselves, Ill share the recipe in another video but I wanted the star of the show to be the fish.
Cooked over hot coals the pescado tikin xic has a wonderful smokey flavour, deep red colour and a tangy taste from the achiote and the sour orange.
