RECIPE :
Chipotle Mayo:
I used half a can of chipotle peppers and adobo sauce about 3/4 cup of mayo about a tablespoon of lemon juice, a teaspoon of salt, a teaspoon of black pepper and maybe like 2 teaspoons of garlic powder actually if you have red regular garlic is even better.
Catfish:
Hot sauce, 1 egg, mustard, ground black pepper, Creole Seasoning, Garlic Powder, Onion Powder, Badia Complete seasoning, pinch of salt
Use your favorite fish fry to coat
Instructions:
Heat frying grease of choice to 350 degrees, place fish in the pan with a jalapeno(optional)and fry about 7 mins rotating half way if using a shallow pan. Should be golden brown and hard. Let drain on a rack and prepare sandwich. I used the chipotle mayo, fresh sliced onion, lettuce and tomato then added my pickles.. ENJOY!!
