Since moving from NYC to LA, I haven't been able to find a decent kaiser roll, or anything else that requires a thin, but crisp, crust. Here, a browned tough, chewy layer passes for a crust. I recollect that it was impossible to eat a kaiser roll without generating lots of flaky crumbs. Not so, here. Even our baguettes are tough rather than crisp. Is it something in the water?

Good question! I’m not sure on the answer but am betting it may have something to do with the weather - lower humidity. I recommend making your own. Try this recipe and let me know what you think. 😊

I made these earlier today and they came out with the texture of a pretzel. What did I do wrong?

So sorry they were dense. Is your yeast new? I’m thinking the dough didn’t proof right. Another possibility is the dough didn’t proof enough. You can turn your oven to low then turn it off. As long as it’s not over 100 degrees you can proof your dough in there like a warming drawer with the door open. I hope this helps!

@@5555grumpyIf you were expecting a NY deli style hard roll, this Kaiser roll recipe is different. The closest thing I’ve found is Brötchen.
