Homemade Kaiser Rolls

  • These yeast breads are wonderful for sandwiches, hamburgers, or for just plain eating. The rolls' decorative shape comes from tying strands of dough into knots. You can use the same knot-technic for any roll. Ingredients plus oven time and temperature are listed below (click "show more"):
    Kaiser Rolls ("Rosette" Rolls)
    I use the same ingredients for my homemade hamburger buns:
    1 cup very warm (110°F) water
    2 1/4 teaspoons (one envelope) active dry yeast
    1 large egg at room temperature
    3 tablespoons butter, melted
    2 tablespoons sugar
    1 1/2 teaspoons salt
    3 1/2 cups (16 ounces) bread flour
    Glaze: 1 egg beaten with 1 teaspoon water
    Optional: Poppy seeds
    Bake 375°F 15-17 minutes

    I love how simple and easy this recipe is! Usually I'm so intimidated by bread recipes since it tells you to like, use flour ground from the bones of your enemies, let the dough rise for approximately 3 years, then has everything to an exact science that makes my pea brain cringe. Just want some dang bread. I'll definitely try this one!! Thank you!!

    Coming from Bavaria, my mothers recipe, cut the tops off the roll, hollow out, fill with sweetened pot cheese, put back the cap, briefly soak in milk, brush with butter, then back till crisp on top and crisp bottom. ( dipping briefly not soaking too much) I can still taste them.

    When you said you had trouble finding you stayed at a reasonable price I found it at at Gordon's food service service and it was under $7 for a $10 for a 2 pound package I hope this can help you because you've helped me with my baking love everything you make

    Great video! I’ve made Kaiser rolls before, recipe from inside Jewish Bakery. I use a stamp and that can be tricky, but I know about making a knot. The recipe I have uses steam for Kaiser rolls. It makes the crust nice and crispy, which is the way I know them to be. I’m in the NJ area, very popular here. I must try your recipe and method, thanks.

    Just took these beauties out the oven. I struggle w/ baking bread a bit, had to knead by hand. These looked gorgeous. Because it is just me, I used the 3 dough pieces, cut in half and made garlic knots with them. Can't
    t wait to see how this all taste. The rolls will be recieving some roast beef, gouda and carmelized onions for my dinner. The knots will get put in the freezer. Thanx again , this one got you a like & sub'd!

    "Smooth just like a babies bottom" the perfect dough--- love baking--but it just me so i do not do much of it any more as i would probablly (sp) weight 600 pounds if i did!! :)

    Hi Kevin, Howard L from New Jersey here. Wanted to try making Kaiser Rolls and watched some videos, but yours appealed to me. So on a snowy superbowl Sunday, spent it making your recipe to the T. Did a couple of things different. Proofed dough for 2 hours and after forming Kaiser Rolls, let them sit for an hour. They came out so delicious. I find them a cross between a kaiser and challah rolls. But they're so delicious. This one is a keeper. Going to have to try your challah recipe too. I usually make Bialys and took like 10 years to pefect them. Nothing like the smell of baked bread. Yum. Thanks for sharing Kevin, appreciate very much. Be well. Where are you from Kevin?

      Hi Howard - I agree with you -- there's nothing like the smell of home-baked bread. So glad these Kaiser Rolls turned out well for you. (I'm in New York's Hudson River Valley -- about 100 miles north of Manhattan.)

      I freeze the rolls. When thawed they are as good as freshly-baked.

    Hiya Kevin how about some pretzels I love them .....nobody I know seems to have a recipe. I've always said if I went to USA the first food item I would try is one of those street vender pretzels 🤪😊🇿🇦

      Lidl has better pretzels than street vendors. They have a bit of an extremely light, flakey crunchy on the outside and a perfect consistency inside.
      Definitely try Kevin's pretzel buns. They are delish!

    If you're looking for yeast a lot cheaper than what you paid for it try Gordon's food service I paid $7 for 2 pounds you might want to look into it I'd save you some money and you'll be great stuff like you always do

    Oh wow I bought that plastic Kaiser roll cutter. Omg. It works but I pressed too hard I think. My rolls deflated Not your recipe. I am going to try yours. I will let you know.
