а вы не думали что рыба при данной готовке приобретает совершенно иной вкус,а не тот к которому вы привыкли? Да безусловно по старинке как у нас водится это вкусно, но что мешает изменить кардинально рецепт благодаря местности другой страны и открыть уже известное блюдо и его вкус с совершенно другой стороны?
Man, I know I came for the fish prep, but I've come to find that I can watch people chop veg and grind spices and herbs all day long. My brain can only create the smells that it knows but it's just so satisfying. I can almost feel how tender that bad boy came out, too. That camera can focus in on the molecular level.
I read a few interesting comments 1. Sturgeon illegal to fish - take note that it is illegal to fish in the wild some countries. But it's not illegal when there are companies which breed this fishes in the farm. The main reason for these farms are for its CAVIAR. So, why waste the meat? Sell it to restaurants. 2. The fish died in the box. - use a pair of glasses to see. When they removed the fish from the box, the belly of the fish has an opening. Which means it was gutted before being placed in the box. If the fish was gutted, how would you expect it to still be alive? 3. Oh dear, they cooked the sturgeon wrongly. Too much spices. - I smacked my head with this comments. Look, western way of cooking is obviously different from Asian. Here in Asia, we cook with herbs and spices. This style of cooking (based on the ingredients used) are from northern Thailand. But the cooking of meat such as fish smothered in herbs and spices can be seen across Asia such as Indonesia, Singapore, Brunei, Malaysia, Thailand, Cambodia, etc. I do understand that western way of cooking are usually much straight forward and simpler. So as to preserve the original flavour of the food. That's why western cooking are usually salted and with a bit of black pepper. Ultimately, it is just the ways people of different areas cook their food. Just respect it as it it. 4. It is simpler to prepare the ingredients in a food processor. - the pestle and mortar is and have been our food processor since the olden days. I am sure that the western world do have similar tool to pound or macerate the ingredients. Yes, food processor or blender makes job faster and easier. But, the taste will not be the same. This the uniqueness of Asian cuisines... Load of fresh ingredients. 5. Who the hell will have those ingredients on their pantry? - Hahaha.. Asian ... Most of Asian people do tend to have most of these ingredients in their pantry or fridge. As most of the ingredients are the basic spices in all of our cooking. I am sure westerners do have their kind of basic ingredients in their pantry or cabinet or fridge for cooking. Most Asian will tend to stock up on the onions, garlic, shallots, Galangal, ginger, tumeric, chillies, etc. (Ps: Asian here does not only mean China. Hehe... There are other countries in Asia such as Indonesia, Malaysia, Brunei, Singapore, Thailand, Cambodia, Vietnam, Myanmar, Philippines etc) These are my 5cents worth of feedback.
A complex looking fish prepared with elaborate and complex mix of herbs and spices. Perhaps the taste is equally complex. I have maximum respect for the chef who appears to have amazing expertise in the cuisine. Love from Kenya.

As a fellow southeast asian. I know rlly well about this kind of dish. Don't know about how thai ppl called it. But for me, as an indonesian. We called this dish as "PEPES". With the samekind of similiar herbs, spices and method. Moreover, we often adding some more mashed tofu or "TAHU" in indonesian, and mix it along with the meat and other ingredients. There's also another method to cook it, by steam it. But the grilled one is the best for me😊. Last one is. The banana leaf cover, southeasteners use it a a lot for dishes. It adds some smell that perfected the dish. Just like how the herbs n spices bring the flavour,taste and the good smell. The leaf cover just perfected it
I am so jealous! Also, even though I am Filipino and as such, SEAsian, I have never seen about 75% of those herbs he used to cook that fish. I still want to eat it.
I had a philipino chef make an incredible fish dish up in Alaska,22 years ago without soo many ingredients yet it was up to now the best I ever had seriously

Cleaning a sturgeon is a bit intense on its own, the ones we get in Ca are huge compared to that one, I have cleaned 6' + fish back in the day. The intensity of fixing the spices and vegatables was really something for me, it gave me a whole new respect for Tai cuisine!
They’re critically endangered almost globally. There’s only a few places left where wild harvesting is sustainable, sturgeon harvested anywhere else is unsustainable and most likely caught by poachers
@@Henfishitydog exactly! Yes I gaurauntee it's farm raised. It can gutted and shows no sign of a hook I the mouth or trauma from a full net. This is actually a quite small one compared to wild ones. It is the perfect size for grilling etc at a restaurant.

Таки да! Сжечь еретика! Никогда не понимал, как можно коптить осетровых, тем более покупать этот бред. Есть непередаваемый аромат осетрины, стерляди, именно поэтому она КРАСНОЙ считается. То бишь самой лучшей, самой пре самой. Данная рыбка скорее костерик, до осетра не дотягивает, возможно откормочный, хотя заплывший в общем-то в меру. И этот индеец сделал всё что только можно, чтобы от осетра и духа не осталось. С таким же успехом можно и буханку хлеба запечь. Из-за ботвы не разберешь.
Испоганил такой деликатес . Сколько смотрю такие ролики во все идет один и тот же набор прянностей и трав, не зависимо что готовят -мясо птицу или рыбу . !

Очень хорошо что не было подробного описания, эту рыбу так не готовят . Осетрине не нужно столько специалитетов. Это царская рыбка - она не нуждается в этом. Да и разделка неумелая . The sturgeon in the video is most likely farm raised. Wild fish don't have those heavy yellow fat deposits.

Осетрине не нужно столько специалитетов. Это царская рыбка - она не нуждается в этом. Да и разделка неумелая . Возможно повар самоучка - дилетант .И не нужно писать что я ничего не понимаю , мол Тайская кухня это фетиш. Возможно. Но это не относится к осетрине 😂
