If you watch chef hiroyuki, he prepared one and apparently, their innards stink too. Like rotten things. They are scavengers after all, so what they eat is already rotten. Honestly, the things people will resort to when they have no real fear of nature and a simultaneous problem with overpopulation
I am sure that their natural predators give them anesthetic before they bite them in half in the wild. We do need to be better than the other animals, though. They could have just set it on the ground and stepped on it like a bug, since they were going to mince the meat anyway.
Sometimes with bugs like this, killing them before processing can cause them to taste bad. They definitely shocked it first tho, it was very wiggly before and almost didn't move when they cut it open. It was probably stunned with a fast transition from hot to cold/cold to hot or put on ice to basically knock it out. When trying to remove it's gut, you do not want it to thrash. So the fact it was almost still shows they shocked it first.

To the people lising their minds over the idea that they may have put ketchup in there, i would implore you to look at the ingredients of ketchup and also at a recipe for an homemade tomato sauce. Ketchup has salt, vinegar, sugar, and tomato paste. Those are all things commonly added to homemade tomato sauces. JUST ketchup would be gross. But this is a full sauce. Plus this isnt heinz. It may be a tomato paste with vinegar, as opposed to a full on ketchup. Relax. You didnt have to eat it.
