I ❤️ Or Luak!! To us, a good plate of or luak must be partly crispy ➕chewy ➕have lotsa eggs ➕ good quality fish sauce ➕fresh oysters ➡️ 👍🏻👍🏻👍🏻 which is quite difficult to find. So I asked Roland to cook this at home according to our preference 😋 After experimenting twice, he finally found the right mix of ingredients & the way to achieve crispy ➕chewy texture 😘😘😘 With this recipe, we can have or luak anytime as long as we can get hold of oysters. 👌👌

Ingredients:
Serves 3
30g sweet potato flour
90ml of water
3 eggs
1 tablespoon of fish sauce (add gradually according to your preferred level of saltiness)
5-6 oysters
A few dashes of pepper - Jak na to + styl

Note: Sweet Potato flour NOT Potato flour. For those asking for best substitute a combination of tapioca flour and rice flour will give you similar chewy and crispy texture.
so.. it can use rice flour?.. i use potato flour.. the texture like corn sturch

@@John-er3bd combination of rice flour and tapioca flour, more tapioca flour makes a chewier batter. The combination of rice flour and tapioca flour will not be crispy but slightly chewy.

@@fionlowww4935 Personally I prefer to invest in a set of measuring spoons and cups and follow the instructions carefully for the first attempt. Thereafter, if there is a need to adjust the taste to your liking, do that in the future attempts. This will reduce risk of failing. Spice & Pan recipes are easy to follow and very reliable and I have enjoyed cooking them.

Thanks for sharing this great video. When I cook the oyster, it just keeps producing water in the pot. Eventually, the whole dish becomes too wet. How do you deal with that? How do you cook this oyster in less than 5 minutes without so much water in the end?
fresh oyster shouldn't cook long.. only frozen 3 to 5mins

@@GLMTraining as we don't have potato flour, we tried tapioca flour too. It turned out OK but a bit too chewy or gluey for our liking. Perhaps we will use less flour or more water to reduce the chewyness and add more crunchiness. If it fails, we'll experiment with corn starch.

Hi Nicole. Better not to otherwise the whole egg dish will be gluey. The actual dish is supposed to have some eggs on it’s own laced with the flour mixture. Hope this helps. Happy cooking!

Hihi usually orh luak doesn't have chilli included -- they are served by the side - this is the norm of most stalls in Singapore
