Dear people, it seems to be oily but if he doesn't add in that much oil the egg mixtures won't turned up as fragrant. if u notice at the end after serving everything from the pan, there's still oil left. not everything goes into the plate la. And that's his first fry with a clean pan also. If u still find it oily after my explanation, reduce the amount of oyster omelette u eat la. Chill, people!

This works for me - the ambient sounds (the roar of the gas fire, the sizzle, the clanging of the ladle, order-taking, plating etc) is calming and comforting since these are so much the sounds of my childhood. Thank you Greg and the friendly stall worker.

When I did the vlog, I shot a lot of footage of Hup Kee Fried Oyster Omelette 合記炒蠔煎 's 2nd generation owner Issac Lau frying up batches of oyster omelette so I thought I'd show the entire cooking process of how or luak is cooked! Video is nothing fancy ah! So don't expect any fancy video effects or transitions! Link to the vlog is in this video description!

It's 1 thing to read the recipe but something else completely to actually see it done. Thank you! From other videos, they use 50g sweet potato flour to 150 ml water for the batter. 2 eggs and 6 pcs oyster for the rest. Additions: fish sauce, green onions, sesame oil, cilantro and pepper.

I would happily eat this if it were lard/ghee/butter/coconut oil as it would suit my macros on a Ketogenic diet, but that looks like industrial oil (vegetable/groundnut) that WILL clog my pipe work.

Early days this dish uses Pork Lard Oil which was healthier. Many mentioned why so much oil. Actually is not, the amount of oil used is to force the oil out of the dish it like 2 process deep frying. I like this dish, then again these days not sure what kind of oil they used. It is the same as Taiwanese fried oyster.

Super sinfully oily dish and I super love it but I only eat it once in a blue moon. Don't think the hawkers use pork lard in such dishes nowadays. In truth pork lard is good oil, better than oil derived from plants like sunflower, soy, canola and palm. Canola oil is actually an industrial oil, not fit for human consumption. Margarine and shortening are the worst kind of oil. Animal fats and butter is natural and fine as long as you eat it in moderation. Best oil for human consumption is avocado oil, cold pressed extra virgin coconut oil which is rich in lauric acid and MCT as well as olive oil. I only use olive and coconut oil and seldom eat out because hawkers and restaurants use palm or cheap vegetable oil to cook their food. Worse, some use recycled oil that has seen better days.
