  • Today I am making white chicken chili and homemade cornbread for dinner. This is a good budget-friendly dinner for 4 people on a cold rainy day. This is gonna be good!

    INGREDIENTS
    1 lb chicken breast
    2- 4 oz cans green chiles
    15 oz can white beans (drained)
    2 ears of fresh sweet corn
    1 Tbsp dried minced onion
    2 cloves of garlic
    1 1/2 Tbsp chicken bouillon powder
    1 bay leaf
    3/4 tsp light chili powder
    3/4 tsp ground cumin
    1/4 tsp cracked black pepper
    3 cups water
    1/4 cup Mexican sour cream
    *salt to taste if needed
    CORNBREAD
    1 1/2 cups self-rising cornmeal
    1 cup all-purpose flour
    2 tsp baking powder
    1/2 tsp salt
    2 Tbsp to 1/4 cup sugar
    2 large eggs
    1 Tbsp cooking oil
    1 1/3 cup whole milk
    3 Tbsp softened butter for pan
    8 inch round or square pan
    *Bake at 425 degrees Fahrenheit for 20 to 25 minutes

    I loved this. But you know what was an added touch for me? When you were pouring the cornbread into the pan before baking 7:24, you could hear the chicken chili simmering to the side out of frame. For some reason, that gave a very special ambiance, one that brought back fond childhood memories of being in the home kitchen as food was being prepared. Thank you for that. 😃

    One of my go to Prep meals in the event of an SHTF. Using canned chicken instead of fresh chicken breast.

    Mom always put the skillet with the grease in the oven to heat up as the oven pre heated. She poured the cornbread mixture into the hot skillet to get a really good crust.

    These one pot type meals are so good to get a yummy dinner on the table. I also love beans. The corn bread is like the icing on top.

    Made it tonight. It was fabulous. Used regular sour cream 4oz and 15 oz can hominy. Honey corn bread.

    What an Awesome supper !!!! I always let my cast iron pan pre -heat in the oven about 10 min after the oven comes up to temp....then i add my oil or butter with a brush & it makes its so crispy on the bottom & sides.... Not sure if you have tried it that way...

    Made this last night for my family. It was a hit. I expected my husband to add more hot sauce to his bowl. “This soup is perfect in seasoning. Doesn’t need a thing”. I didn’t have fresh corn. As Angelica says in so many videos
    - use what you have. Canned corn worked great. I saw a comment where someone used canned chicken. I have some that I’m going to use up in another batch of this delicious soup.

    Always use buttermilk. Needs more oil in the mix. It will be dry with that small amount of oil. At lease 1/4 cup in the mix and some in skillet to make bottom crispy!

      Add a little lemon juice to whole milk and that is a good substitute for buttermilk, but its really not necessary. Its according to taste. Most ppl cannot tell the taste difference unless they grew up in the South watching grandma make biscuits and cornbread.

    Preheat your skillet and that cornbread will have a crispy bottom and be so much better

    First you cut the cornbread in squares and then you cut it a little lopsided. Oh no! LOL JK! You just gave me an idea what to make with a carton of chicken broth, leftover chicken, a can of hominy and some green salsa I have. I just wish I had some cornmeal or even a box of cornbread mix.

      I typically soak mine in water then drain. I know some people like to scrub and thoroughly wash. It's really up to you and your preference. 😊

    Is there any concern with cooking everything together in with raw chicken? I guess when the chili comes to a boil it kills any bacteria?

      As long as the chicken reaches an internal temp of 165+ degrees and is cooked thru, you're fine, and boiling liquid usually reaches at least 212 degrees F, so you're fine. You could create a richer flavor cutting up the chicken beforehand and cooking first in the dutch oven/pot you're using, and then deglaze the brown bits you get (the FLAVOR) by adding the chicken broth afterwards, and then the remaining ingredients and cooking to desired doneness (as far as the veggies go).

      Like another person said I'm skipping that part and using canned chicken breast. It will be ready in a jiffy! I'm going to omit the bay leaf since that's normally used for cooking the chicken.
