  • Today I will show you what I cooked for dinner. I had a subscriber reach out to me and wanted to see a recipe for sopita de conchas. I used thin cuts of beef, but you can sub with ground beef. This is gonna be good!

    INGREDIENTS
    1 lb beef for stir fry
    7 oz bag of conchas
    1/2 small onion
    2 to 3 cloves of garlic
    2 medium potatoes
    1/2 tsp ground cumin
    1/2 tsp cracked black pepper
    1 cup crushed tomatoes
    1 Tbsp chicken bouillon powder
    6 cups water
    salt to taste

    Sopa is one of those foods that I never get tired of.
    Growing up, we had this a lot... At home, at nana's at my auntie Lola's... Call me crazy but I enjoyed it even more in the summer.
    Sopita really hits the spot.
    On days cold enough to freeze your behind and even on those hot enough to fry your behind.
    It also brings back so many sweet memories.

      Isn’t it funny how the lower amounts of food we had = greater appreciation of the food! 1. It’s made with love to help it extend for all! 2. The love to prepare the dish with maximum flavor let’s the family members know it’s full of love ❤️ and desire for the family members to be satisfied with the frugal recipes

    We always had sopita de conchas without meat because we were too poor lol. But it’s such a comfort dish for us. I’m gonna try that chipotle sauce for sure too!

      @@summerf3022 Mexicans traditionally always have something sweet to drink with their meals. Albeit soda or some type of flavored water (aguas frescas) especially in the summer! We also drink hot beverages that are flavored and sweet in the winter called atole or champurrado. All our drinks are mainly centered around natural fruits or ingredients. Search for “aguas frescas” you’ll be thrown aback with all the flavored water flavors available!

    I’ve never fried my shells until I saw you do it and man your meals are always a hit with my family. I grew up eating these meals never learned to make them until you showed us.thank you ❤️

      Frying the shells is how our fabulous Mexican maids taught us how to make sopas. They fried rice, Fideo and other pasta, but not spaghetti.

      You can substitute with zucchini, corn whatever you have in hand. I make it with chicken.

    We grew up eating this meal but used hamburger meat. This was our favorite dish. My mom would toast the shells but never told us why. Thank you for explaining it to us it makes sense! 😀

    Damn, them struggle meals tho!. Even use ground beef for this too. Can't find nothing like THAT in a restaurant! ☺ Keep making them miracles Mama! I still do!       Actually saw it at mex rest down here it was7.99 a bowl.l almost flipped can feed 10 with that.Abuelas taught us well.She always said room for 1more,ponle una taza de agua a los frijoles hija,para todos hay.Women of faith,women of strength.

      I grew up eating this l also 1 diced carrot and few strips of bell pepper.l also make it with ground beef or chopped chicken.Delicious and very economical.

    For some reason this reminds me of something my grandmother used to make even though it’s not the same. She used to make what we called macaroni and tomatoes. It was literally just macaroni noodles and canned diced tomatoes but the key was a ton of butter salt and pepper. It’s the most simple thing ever and cheap (which is why she made it) but it is so comforting to me now as an adult as she is no longer with us. ❤

      I found the recipe for it in a Betty Crocker cookbook my supervisor @ work gave me for a wedding gift. I made it & my husband informed me his mother had made it for his family growing up. It's very simple but very tasty. The Betty recipe called for parmeson cheese to top it off during the last 3-5 minutes of baking.

      Ain't nothin wrong with good old texmex as long as you understand it's not authentic Mexican cuisine but it is its own thing and it's very good! I grew up on all kind of border food because my dads family came from New Mexico. As white as we are (I glow in the dark) enchiladas are a family recipe for us. I found out later from a Mexican friend that my beloved recipe wasn't real enchiladas. Mine is more like a casserole. I do mine really full with ground beef, it's rolled up in corn or flour tortillas then squished in a 9x13 pan and covered with sauce and cheese and baked. This is how I learned from my grandma. And its good. How do you make yours? My friend told me real enchiladas are fried.

    This is a very flexible recipe, too. We use beans instead of potatoes. Beans are a good protein replacement or supplement. Hamburger, pork and chicken work just as well. You can also follow this recipe using rice instead of pasta. Now I have to cook this! Yummy! Thanks for sharing!

    It’s bedtime here and entire house is quiet, but...I want to grab a bowl of this comforting soup, yummy salsa/tortilla and fresh juice and just relax...I can’t wait to try this!
    When you said make shells al sentence/brown them or make them firm, I’m saying in my head yessss!! That looks incredible, your patience and using your mortar to grind ingredients was so satisfying to watch and I could taste it thru my screen! 🙌 yummmm

    This was my family's go to dinner ! Except we used ground beef && always added corn & cilantro to it.

      Oh, honey, so sorry your mom has gone! My mom has, too, and I remember doing exactly the same thing for a while when she died - stopped cooking her recipes as it was too painful. But our moms' cooking brings us such comfort. Please don't let too much time go by before cooking her food again. She'd want you to enjoy those meals some more, and you know that! :-)

    Just a few tips: It's always best to allow for your raw meat to come to room temperature before you add them to a hot frying pan. That goes for all meats which includes steaks that you're cooking out on a hot grill. The purpose is that the meat will retain its natural juices which makes them flavorful and tender. When cubed meat is browned in a frying pan, add your ingredients and broth. Steaks should be allowed to rest, once off the grill, for 5 to 10 minutes before you cut into them (depending on size and thickness). If you don't, all it's juices will flow out of the steak and it makes it tough and chewy.

    I did make it tonight. It was delicious! My sons wanted it spicier (maybe hot sauce or hot salsa)… those fried wraps were a big hit too. I used Mozzarella because I didn’t have the cheese you used but they were still delicious! Thank you for a great dinner idea 💕AND….the fresh pineapple drink, omg, awesome & refreshing!

    My mom makes this sopita for my nieces and she used to make it for my siblings and I growing up. She uses chicken instead of beef, but it's so bomb and comforting. Seconds is a must.
